You can clearly see the progress of cooking of the pig and make adjustments the way pig will cook and also 8 hrs of cooking makes questionable it usually cook by 2-3 hours max in 4 of roasting the pig it depends of how big it is. if you think the stuff inside will not be cook in 3-4 hrs it is all ready cook before they put it in. i guess inexperienced kick in thats why the outcome not so good but i enjoy the vid big fan of sunny here. haha

Reminds me of the biggest whole pig roast or lechon as we called it in the Philippines that I saw and tasted back in the late 1970's. The pig was young but weighs a little short to 50 kilos. The normal size for proper roasting was only 30 kilos. It was almost perfect by appearance, crispiness and flavor. But some parts inside were medium rare. The secret to a good roast is the age of the pig. Mature pig won't taste as good as the roasting age would.
