Cashew Chicken Recipe:
5T oil
5t soy sauce
3t corn starch
4 boneless chicken breasts (cut in cubes)
1 medium onion
1 clove garlic
1/2 lb broccoli
1 green pepper
1/2 C chicken broth
1/2 t ground ginger
1/2 C cashews
White rice
Marinate chicken in 1T oil, 2t soy, 1t cornstarch- refrigerate 30 mins.
Mix chicken broth, ginger, 3t soy, and 2t cornstarch, set aside. (I make a double batch of this)
Heat remaining oil in skillet. Stir fry chicken over medium high heat until chicken is white. Remove from pan. Stir fry veggies til tender. Add chicken pieces. Add broth mixture. Stir til thick. Add cashews. Serve over rice.
