To play as Sissy in the Neo Geo version, select any character, then press and hold the A,B,C, and D buttons at the same time until the VS. screen appears and you'll be able to play as her.
This one is too bizarre for nowadays tastes. Actually even in the 90s... So tthis version had the humor nerfed compared to the first two games. Modern fgs dont allow a certain level of humor, so sadly it has little chances of returning.

Sadly, Noise Factory, the developer they got to work on this and Senzo Kuyou, is pretty much gone now, and I don't know if they necessarily want to find another for the job.

I think they were removed for non-Japan releases because the Chinese and Koreans are easily offended when they hear the Japanese language being spoken or sung. That's why in addition to the vocalized BGM being replaced by generic BGMs, all characters voices shouting or speaking Japanese were all replaced with generic grunts.
The physical overhaul they made of her is very good, but the game is very slow, especially when the characters have to move away. And the sprites of some characters in this game are different from the promotional design (Keith Wayne is an example), while it didn't happen with Hamilton.
If that's your opinion, then you'd probably prefer the Western version where all the stage songs are replaced with generic BGMs. And all Japanese voiceovers are removed and replaced with generic grunts.
I don't know which part was it where there was a Shaolin warrior and a Ninja and a woman wrestler and Indian-American warrior - this was the best game and when I've played with the Shaolin warrior I was literally unbeatable. His spells were awesome there was a flying sticky thing he was throwing at the enemy and a skull doing massive damage. He was the best. Then I was a good player also with the Ninja and a fighter with a blue head strip/band, blue jeans looked a bit like Axel from Streets of Rage. Sorry I don't remember names but that was Power Instinct. That I remember and it was way better than this one.

Why did the western version remove most of the music, especially the scenery itself, and some Japanese dialogue by the characters?

You know, maybe it's a bad idea for the BGM to have lyrics when the characters are also shouting out the names of their attacks. Just a thought.
