    Try turning that charcoal basket for the main cooking chamber upside down and using it for a heat deflector then run a big wood fire in the firebox keep it big?

    • @EverettBBQ
      @EverettBBQ  ปีที่แล้ว

      Thanks for checking out the video, Ray. Indeed, sir.... when I have flipped that grate, I do run a much larger fire and end up burning through more splits but I will say that the temps are much more even throughout the cooking chamber that way. The biggest downside for me has been the difference in smoke flavor. While the smoke is still there upside down, it's not as prevalent with it right side up or removed completely. Cheers to you and happy smoking out there. 🔥

      @@EverettBBQ Good to know you would have to drill holes in it but you might want to just get punch plate instead if you want to meet in the middle somewhere

    Love to have you review the smoker after you've used it a dozen or so times to see if the nuts/bolts continue to be tight. I'm thinking that I'd probably go over it with a MIG and just weld up the different points, especially the chimney

    • @EverettBBQ
      @EverettBBQ  3 ปีที่แล้ว

      Thanks Toophless One! The idea is to review it about 20 cooks in... I believe I'm at 12-14 cooks and it's stayed fairly tight. Just need to add a new gasket is my thinking. I like the idea of just welding the parts together. I mean, it's not like I'm ever taking this thing apart at this point. Thanks my man! 👍

    • @1TALLKING
      @1TALLKING 2 ปีที่แล้ว

      @@EverettBBQ I've done over 20 cooks on my XD and it's held up with no issues. I had the firebox welded to seal it and added a thicker gasket to the fire box. I also added a clamp to the firebox to complete the seal. I cook on it EVERY chance I get! I bought it the week it was introduced and it will last forever. I also cooked with an extended stack and that airflow and temp stayed steady all the way through. Keep on cooking!!!

    Get the Dyna-Glow in the background the fire box is too close to the meat and the fire box is hard to clean out ashes. The Dyna Glow is easy to clean the ash and the fire box won't burn your food if it gets too hot look at his side-by-side video .

    Hey brother! Always love your videos. My family has started watching you too! Great stuff! You helped me on Dyna before. I just bought a Grand Champ. How’s the coal set up on this thing? Just a full chimney and dump with some wood? Or is similar to Dyna ..layering the coals? Kinda minion method?

    • @EverettBBQ
      @EverettBBQ  ปีที่แล้ว

      Hey Chris, thanks so much for the should out! Sorry for the late reply but yes, I try to go with mostly all wood if I can. I might add some unlit lump charcoal for a boost but I keep adding smaller splits of wood in roughly 25 minute incriments once I get my coal bed going.... depends on how seasoned the wood is. • @EverettBBQ
      @EverettBBQ  ปีที่แล้ว

      There is still a small leak on the left side of the cook chamber but that's where Chargriller did not put the gasket on... it was missing from the assembly. Honestly, a little more trouble than it's worth since it is SO heavy, but I do love the results from the cook. It does great with just wood and even better with charcoal combo wood chunks. I love owning it but it is a bit of a job cooking with it.... it requires more visits to the firebox than your regular offset smoker. I would give it 7/10 stars.... maybe 7.5. I still smoke most of my pork butts, briskets and long cooks on the Weber Kettle with the Slow and Sear if we were talking about volume over the last three years. Hope this helps and hope you're doing well. Cheers and happy smoking out there. 🔥

      There have been a few others with a similar story. I didn't even notice at first but they did not include a felt gasket on one side of the lid as well. I can't complain about the food though, that thing is a smoking machine. Happy 4th my friend! 👊
