There are so many opinions on what diet you should have. Some are gluten free, vegetarian, or vegan. Our diet aligns more with Paleo but I like to call it a "traditional Diet". I trust a diet consisting of whole unprocessed foods more than I trust products that were modified in a lab somewhere and sold by companies with their hand in the pharma industry. Sorry, let me put my tinfoil hat away...

I grew up with my parents and grandparents cooking with lard. I like cooking with lard. I used to buy it from the butcher when my kids were little. Love Biscuits made using lard.

Definitely enjoyed the video. When I was growing up we always used lard and my grandmother always saved the bacon fat in a tea cup on the stove ledge to add to soups and to cook with to add flavour. We collected our water in metal garbage cans and lived a very simple life. Now I am 52 and live on my own homestead and still keep many of the traditions I grew up with. 😊

Zack, I render my leaf lard and those cracklings make the best cornbread. So if you are really going back to traditional….you need to try crackling cornbread😁

It's great to see so many returning to ancestral roots! Many are waking up to the poisons they're putting in our food. It's been refreshing to see and to think for most all it took was C19 back in 2020.

Was a little surprised to see the whole process takes 8 hours?! I've never done it by myself but I have watched my parents do it and it would be done in thirty minutes with high heat.
I grew up with my mom cooking with lard , and I only cook with avocado oil, but after watching this, I did some research and found out stores here in Canada still carry lard and tallow. so I'm off to the store, as Avocado oil is very expensive !
We render down our own lard and tallow. Like you said, we know where it comes from!
Invest in a slow cooker/roaster. We use a 22 quart roaster to render down our pig fat.

absolute loving all the videos. I am learning so much and started binge watching so many of them. I seen if explained here and there in videos. but I was wondering if you could possibly do a video a little more in-depth with what you Grow for your animals and what you have found beneficial and the ratios and how you feed you animals. your animals all look amazing and incredibly healthy, not over weight but still provision a great amount of fat and meat. im just in Aww of what you and Ashlyn have accomplished.

I thought leaf lard was from around the pigs kidneys? You are right I agree lard is a fabulous/healthy product to cook/bake with just like beef tallow. Also lard/beef tallow make a wonderful bar soap. I make and use my own lard soap for years, I love it. Hint add a tsp or 2 of table sugar in your soap batch. Great video!!
The left over pieces are called cracklings and they are a nice additive to a salad or when you eat potatoes with carrots or kale. Lard is also a great in seasoning your cast iron pots and pans. Enjoy your lard. 😊

Yes sir I agree and believe that the type of information that you are sharing is so much of what the homestead lifestyle is all about. Although it may not be for everyone! I'm sure that there's statistics which can support the many dangerous health related issues that are directly related to many modern day convenience with so many of our food choices. Good job 👍
Thank you. many years ago I switched to lard and tallow but by far the best is duck fat! that is my favorite and baked duck is super easy to make and the fat left over is a reward for many weeks afterward when you render it down. This has been like so since I can remember and I'm 37 living in the big city.
Lard is the closest thing to human fat, that is why it so good because it is healthy. Our bodies can break it down the easiest.

We stopped using vegetable oil and have gone back to the basics of using lard and bacon grease.
Good animal fats are sacred in many cultures, would be the most prized food commodity and there are so many interesting old ways of storing these fats from around the world.
..especially if you’re trying to have children 💯👌

Do you know if the bad seed oils includes avocado oil and coconut oil? Or is it just sunflower and safflower and canola and things like that?
I believe avocado oil, olive oil and coconut oil are okay! They can withstand higher burn temps
Zack do you melt down the back fat from the pig? I am waiting for my pig to come back from processing and request all fat separated so I can process it down.
Yes, we did render our back fat with our lard but you could always separate and see if you taste a difference

You both would make 2 great subjects since you watch what you both eat and use lard, etc Get a cholesterol/triglyceride blood test done? Seed oils are dangerous! I use extra virgin olive oil, coconut oil, and non hydrogenated lard!

Pretty much, except I add some salt while doing tallow.
You are going to cut your fingers, badly, at some point. It's not just the looking away as you slice.
It is much safer when you cut, to curl the fingers of your off hand back toward the palm. This way, your fingertips are not in the way of the blade. Think of it as holding the piece down with your fingernail tips.
This greatly reduced the chance you cut your fingers.

Super interesting. My grandfather grew up really poor and used to eat a sandwich which was just two pieces of homemade bread with a thin layer of lard.

Slice of bread, layer of lard, salt and paprika. I love that stuff and grew up eating it.

@@zeljkoblazevic2152 I am not. My grandfather grew up in Minnesota, but there were many immigrants where he lived.
On Little House on the Prairie, Laura, the “poor” girl, had bread spread with lard for lunch. Nellie, the “rich girl”, who’s father owned the local mercantile, had bread with butter.
As a child in North East England lard on bread with a sprinkling of salt was something we had now and again, especially after a roast had been cooked the day before. The juices from the roast, after taking some for gravy, was put in a bowl and refrigerated. The lard rose to the top and solidified but still soft enough to spread on bread. The brown jelly like stuff underneath could be used to make really nice gravy during the week.
I buy all my food direct from farmers. My cows come nose to tail so I get everything. I render the suet into tallow allow as I need it. I’ve been doing smaller batches but I run them through the crock pot several times. My pigs come in bundles so I don’t get the leaf fat. The only other “oil “ I use is ghee. I have not had sunburn since I gave up seed oils in early 2020!

I'm currently trying to find a place I can buy it. Most big box stores only have shortening and vegetable substitute garbage. I need to check some Mexican import places next.
Have a lot of respect for growing your own food. You are right that people go a lot of different directions with food consumption. We eat a lot of organic veg. & fruit and buy grass fed, grass finished beef from a producer in our area of central Ks. We also don’t eat processed foods. However we don’t eat pork for health reasons. We’re Mennonite and believe like Jews that pigs have bad (oscillating) energy. I have turkey bacon with my eggs.

Called local butcher a while back. Legally they couldn’t give or sell me unwanted animal fat. They said it’s illegal.
Of course the goverment making laws that don’t help,us but are more controlling and more intrusive into parts of our lives that they have no business being involved in.
Look at what they did to the Amish farmer in Pennsylvania, who,was selling private food subscriptions, for meat and raw milk. The goverment has tried to shut him down for “ health and safety reasons” . It’s gonna go to the Supreme Court , as the other court has upheld shutting him down.
I wonder if you can do that process in a crockpot 🤷🏻♀️
