The misunderstanding is that this is not 'gyros' but 'souvlaki'. Its not a traditional 'souvlaki' with pita but still its a 'souvlaki'. 'Gyros' is meat on the rotisserie. Is something like making a chicken barbecue pizza and calling it pepperoni pizza. Its still a pizza, but there is no pepperoni in it.

When I was a kid I lived in Greece and had the most amazing Souvlaki/ Gyro I ever had in my life I am a gyro nut after going to tons of supposedly the best Greek restaurants in Oregon and in Canada I have yet to have one that rivals the ones in Greece. I watched a lot TH-cam vids and it seems to me that they don't make them the way that they used back In the 70's when I was last there. Then it was the bread the meat tomatoes onion and some tzatziki sauce rolled in foil. That was the best barnone. This looks really good and would gladly eat it but not the real deal. It's hard to beat the original.
MrHammerGR they're cooking home grown shit in the middle on the woods on pots and pans they melded with a fire that they started. Cut them some slack lol

So the water from the cucumber just balances the richness. :D
completely agree.....We shred them and leave them to drain, the water in cucumbers is usually the reason for thin tzatziki. When we have to rush it, because we are running out it turns thin. We make 8 gallons at a time, enough to almost fill 2 5 gal buckets, mix it with a drill + paint stirrer attachment. Salt will help bring water out but we cant use it, would effect recipe

Hello from Greece. Next time in "tzatziki" try to add some vinegar, olive oil and pepper to. Also if you dry the cucumber to dispose the most of the water before adding it in tzatziki, the final result will be perfect

I make a similar Chicken Gyro dish, we use diced tomato, diced cucumber, taziki, and carmelized onions. The carmelized onions make the dish.

You should have let the sliced cucumber with some salt to get rid of it's water, that way the yogurt doesn't get watery :D

It wasn't yogurt but "pavlaka" sour cream, which has higher fat content and lower water content than yogurt so it balances out 😉
