Red specked bean soup and dumpling for colder days

  • We’ve experienced the most coldest days recently and bean soup was one of our household winter 🥶 beans are high In soluble fibre content, these help balance blood sugar levels while providing steady, slow energy, which makes them a good choice for people with diabetes suffering with insulin resistance. They can also be meat substitute.
    Dumpling recipe
    3 cups flour
    3/4 tsp salt
    1 tbsp sugar
    1 cup warm water
    1 tbsp oil
    7g yeast
    Instructions ~ mix dry ingredients, add wet, leaving some water so that is not too much and adding it as required, or add a bit of flour to fix the texture of your dough, knead until your satisfied, cover and let it rise, split it in half, grease your bowl add half let it rise for about 20 minutes and boil as shown on the video until the knife or toothpick comes out clean, take it out let it completely cool and cut. And do the same with the remaining dough

    1 1/2 cup beans
    1 large potato
    1 large carrot
    2 celery stick with leafs
    1/2
    Green pepper
    6 cloves of garlic
    2 small onions
    Fresh parsley
    Oil
    Butter/ margarine
    Spices and dry herbs
    Brown onion
    Ground coriander
    Paprika
    Barbecue
    Rajah curry powder
    Tumeric
    Chilli beef stock cube
    Chicken stock cube
    Pepper and salt to taste
    Thyne
    Origanum
    Chilli flakes
    Instructions ~ clean and wash your beans, boil them on low heat till almost soft, add potatoes,carrots, stock cubes and cook till almost soft. In a separate pot, fry onion and celery, dry herbs, add garlic and green pepper, spices add some water to avoid spices burning continuously until coooked for about 10 minutes, add your beans, let it simmer for 20 minutes add chopped celery leaves, cook for 5 minutes, switch off your stove then add parsley and pepper and always taste if your seasoning needs to be adjusted. Serve with your dumpling, I add plain yoghourt in my bean soup it gives it that rich delicious taste
