- I love making this soup especially on those cold frosty winter days. It’s warming, hearty and nutritious and of course seasonal. I have used vegetables that I’ve grown myself and stock that I made from the trimmings of my homegrown vegetables but what I really love about this soup is it’s versatility. You can really use any squash, and I’ve even made it with courgettes and summer squash that are hanging round at the end of the growing season when you’re sick of looking at them and all out of ideas to use them up😀.
Sometimes on really cold days or just to change it up I’ll add 2/3 tbsp curry powder when I’m sautéing the vegetables - it makes the soup lovely and warming.
If you’re using raw potatoes just cube them and add in at the same time as the onions and garlic.
You can use any stock - chicken stock is lovely too. And stock cubes are fine - just watch out when adding salt as it may be salty enough from the stock cubes.
I highly recommend investing in a hand blender/stick blender if you don’t own one - they are invaluable for soup making and even for preserving, making mayonnaise etc. They’re fairly inexpensive and have so many uses.
This is a very rough recipe because as you can see I don’t measure, mostly because I don’t want anything to go to waste. But also because it will taste generally the same no matter what proportions you use.
1 Squash ( I used Red Kuri, but Butternut/Acorn are good too)
1 Large Onion
2-4 Cloves Garlic (to your own taste)
2-3 large potatoes (I used leftover mash)
2 litres of stock
Salt & Freshly ground black pepper
Butter
Bacon to garnish (optional)
Cut squash in half, remove seeds and place cut side down on a tray and place In preheated oven for 20/30 mins until tender.
Peel and roughly chop all the vegetables including squash if you don’t have time to roast.
Sauté all vegetables in a knob of butter until soft and slightly translucent but don’t let them brown. Adding salt at this stage helps to prevent them from browning.
Add stock and bring to the boil, then simmer until the squash is tender.
Blend to a smooth consistency, serve in a warm bowl and enjoy with good homemade bread.

Just watched it again. The sound of you chopping away and the sizzle in the pan is so much nicer, almost calming. Looks like a very tasty soup
