Franklin's, La BBQ, Interstellar, Stiles Switch, Micklethwait's, Leroy and Lewis, Terry Black's, KG's, Brotherton's..we are lucky to have no shortage of great barbeque joints here in Austin.
When the brisket inspires an embrace and an "I love you" to Ms. H, that is some powerful beef. It looked beyond words! And, Ms. H your nails were fabulous also! BLY!
When I was Alana's age, my dad gave me my first Jalapeńo at the supper table. It blistered my lip.😂 I didn't eat another one, until I was seven. Now I love them. Especially grilled, with onions, on a Whataburger hamburger. Or stuffed with sausage and cheese and deep fried.
Loved the Brisket Hug! Shows how much you love each other and that you're lucky to share this moment, with each other, making wonderful memories for life... ❤ And Mrs. H. Loved you critiquing the 'Smoke Ring'!! Technical terms and scrutiny of the product! You're becoming a BBQ Pro! You GO Mrs. H! 👍
All the people fighting over who has the best BBQ - let's be real here, any of these places you go to will be terrific. One place might have better ribs, one might be better at the brisket or burnt ends, one might have better sides or desserts. For me, the best is still Terry Black's followed by Franklin's and Goldies and a couple of other places you haven't been to which I think are better than any of them but that's neither here nor there lol but again, ANY of these places and you will get amazing foods.
Even MORE ridiculous is the argument of which regional style of BBQ is better . I grew up outside of St. Louis , we always had grilled pork steaks with Maul's sauce . As an adult , I have traveled all over the country , and tried BBQ in all of the regions - - Carolina , Texas , Memphis , Alabama white , and others that are not as well known . Saying that one region is better than another is like picking a favorite child - just dumb to try to do so . All are great - all are unique - all are worth exploring !
Agree with everything you said. When people ask me who’s the best BBQ in Austin, I often have to follow up with, “what are you hungry for? Turkey, pork ribs, beef ribs, brisket, pork belly? There is not one place in which everything is the best. But they are all close enough that I won’t be mad if we go anywhere of them.
@@marlounbayari1288 I mean there's that food truck in Austin (or maybe they got a restaurant going now, I'm not sure) that fuses Texas BBQ with Egyptian cuisine. I mean, that's pretty awesome. There's something for everyone, literally. It's like going to NYC (or any of the 5 boroughs really) and being super overwhelmed with the amount of choice for almost any kind of cuisine you can imagine. It's crazy, just like BBQ is in Texas etc.
Not Texas toast. It’s regular bread for making a sandwich. Texas toast is thick bread that has been toasted with, usually, melted garlic butter on it ! Delicious! Wish you guys would inform other British reactors that sauce is to be used ! They eat tacos without sauce or salsa ! You guys try everything ! Great videos !!
Texas toast is just thick cut white bread that tou can make a toast that stands up to sauced meats .... Mrs. Baird's sells Texas toast at the grocery store. It's just great for toasting because you can toast it and get a crunchy outside that is still nice and soft in the middle because of its thickness
With the shear number of Brits reacting to Franklin and Terry's, I am hoping a day comes when you start up your smoker at home, turn around and find every British YT reactor just standing outside you house with dixie plates just waiting for your BBQ. Nothing spreads joy like great food. Love your videos H Family. I have few Southern BBQ and side recipe from my time at a BBQ shop that won the DC Chili Cookoff 5 years in a row. Their sauces, spices used, sides like Chili, Collard Greens(my fav) Baked Beans, and more. just let me know where to send them, as they are "secret" :)
You know, Memphis Tennessee, Kansas City Missouri & Kansas and St Louis Missouri and North Carolina are supposed to have good BBQ and they are different in flavor and what they cook the best.
A lot of people make fun of America for not actually having “American” food, and that the popular “American” food is just cuisines originating from other countries. But right here, this is a cuisine no other country does better than America, and that’s BBQ.
I have a great place in the Chicago area 2 blocks away for brisket, pulled pork and Chicken in a place called "Hog Wild". But what I don't have that you have in Britain or Ireland is a proper place for good Fish and Chips, for some reason they just can't do it here. I only get to go home to Ireland every two years for a brief time to pig out on breakfast, black pudding especially, Fish n' Chips mushy peas, slathered in malt vinegar, Periwinkles, Rashers etc. love your Channell guys keep on doing what you're doing, I also love watching Beard meat's food, check out his Channell.
Alright! Good deal. You are catching on to the lingo, you said sauces instead of dips. We have dips they are usually thicker and made for chips (crisps) like bean dip or queso which we just call queso. Ranch dip also is an example.
The nice thing about taking Alana on these trips and trying new foods is you're broadening her palette and she's going to have an easier time in the future adjusting to certain spices that could be more difficult for some of her peers to get used to. Bravo to sharing this experience with her!
I can remember when I was just about Alana's age. My dad wanted me to stop sucking my thumb, so he rubbed my thumb with Tabasco Sauce. It turned out I loved it! I held up my thumb for more! I'm still nuts about spicy food, especially Tex-Mex cooking.
I know you guys weren't expecting that flavor with the espresso BBQ sauce. You should know that American's will try combining flavors like coffee into other things that no one else would think of. I don't know if they still make it, but a few years back Coca Cola decided to put coffee with vanilla or caramel flavoring into their coke. I remember the first time I tried it I was really confused as to what was going on with the flavors. I definitely tasted the vanilla/caramel and the coffee, but at the end you could taste the coke. It was good, but whenever I drank it, I was always confused because for 30+ years of my life, those flavors were never mixed together.
A restaurant in my old city had a Mocha burger that was SO good! The patty was rubbed and grilled with a coffee spice rub, the bun was toasted with butter then had a layer if Nutella spread on it. Add crispy bacon, smoked gouda and a slice of grilled tomato. Perfection 😌🤤
I'm one of those people that love sauce on my BBQ meat, it always makes me feel self conscious because most people are like "You have to respect the meat!!!" But I think as long as you're enjoying it the way you like it that's the perfect way to have any meal 😅
I've been to BBQ places that you could not tell the difference between what you were eating, it was tasty, but there should be a difference. I can't wait to see your thoughts on the pbc, I hope your experience is as good as mine.
Aaros book on BBQ tells his secrets for everyone to try . You do have to pay attention to what you are doing ,especially with the the smoker / fire and the temperature. Try some mexican style smoked over agave leaves ,eather beef or cabrito .

Love your videos. When you say you should get there early, all of the other YTer videos show them arriving around sunrise to get in line, especially if you don't want to miss out on getting everything. Sometimes, that's not even to be at the very front. Still, their BBQ looks so worth the wait. Can't wait to try myself someday.
You're missing a delicious trick by not putting some pulled pork, bbq sauce and coleslaw on some of that white bread and making a pulled pork sandwich.
Classic dad humor in the intro XD Oh and Mr. H, I know you're going along your own barbecue journey and I'm not sure what type of wood you can locally use or if you're getting your wood from a vendor but don't worry about using specific woods! Experiment with different ones to find the flavor that you like! Post oak, cherry, maple, mesquite, pecan, hickory, etc! Some woods are not recommended for smoking and could actually be toxic (I believe cedar can be toxic, pine? as well (I'm not too sure but the info is out there)) but it might be worth it to even try a local variety of wood as well! True UK Barbecue!
I grew up in the Austin area and lived in Austin in my early 20s. I haven’t been to Lockhart in quite a while, but Louie Mueller's BBQ was always my favorite. Franklin's has his own twist on things that this Central Texan just doesn't care for. It doesn't compare to what I grew up eating in that same area.
Each BBQ place has a slight difference in taste. Whether it is the seasoning, type of wood used, sauces. or quality of meat. The BBQ place I worked for did not use "smokers", they used a "Pit" BBQ. It took even longer to cook, but still gave that great smokey flavor. The hardest part of loving GOOD BBQ, is many shops around my area now use "Electric" smokers. That "fake" liquid" smoke stuff and briquette coals instead of real wood. Its cheaper, but not NEARLY as tasty. Once you taste those true wood smoking places, you get picky at lower end spots. Love your vids as always. Safe travels!!
They make exceptional BBQ. Really, our entire state makes great BBQ. Post oak is extremely popular wood, but you'll also run into mesquite, hickory, and then the fruit woods, like Applewood and cherry. Pecan is underrated to use, and we will sometimes use small amounts of it and cook peach cobbler, and pecan bars on the grill/smoker. It isn't too smokey, but just has a hint of an outdoor/campfire dessert feel to it. My grandma used to make a homemade ham with something called red eye gravy, which is a darker and thinner (typically) gravy made with brewed coffee. It is fantastic. Sometimes she would add some of it to a pot of beans and we'd eat it with homemade cornbread and beans. You can add a cornstarch slurry to thicken it with a neutral flavor if you want. Dip some bacon in that and put it on top of a cheeseburger and it will change your life. You just can't beat great homemade food with good friends and family.

You happy to be back in Texas?
That hug. Love it
As an Okie (Oklahoma) no one should be happy to be in Texas....But I get it lol
That dinner looked mighty tasty! 🤤
Yes, that's what you want. Good BBQ should always be "Mmm" when you first taste it, followed by a surprised "Ooh!" a few seconds later.
So many layers of flavour (flavor) 🤤
