I think you can also look on the drinks parts. Bcoz on the low traditional place you earn 3$ for every dollar spent on drinks but on the high end place you earn less than 3$ for every dollar spent. As a usual practise a same drink will be higher at the high end end place compared to traditional place.

Also i think we might need to consider on the decor cost which would be a significant amt for high end place.
Also for the traditional place in addition to delivery tieups may be we can add a quick take aways booth to in crease the sales.
