    Hey man, Just wanted to say i watched this video when you first posted it about 6 years ago and it was the first loaf of bread i ever made because this video made me think wow so simple. Anyway 6 years later and hundreds of loafs of bread later I now work professionally as a chef and make bread on a daily basis for friends and family who all know me as "the bread guy" all from one little video i watched here 6 years ago! Thanks for making a fun video that inspired me so long ago.

      Whatever I'm cooking or baking as soon as I'm done with a utensil of bowl or pot or whatever I stop and wash it and put it away before going on to the next step (unless I'm doing something really time critical.) Might make things take a bit longer overall but I really enjoy it more that way, so much more relaxing and enjoyable for me when I don't have to think of all the washing up to do later!

    Exactly!!, if you count the actual time you spend tending the dough it's really nothing. It's all about being clever and organized ;) One should think a few days ahead when he needs bread, then spend 5mn here and there getting it sorted!

    Made the dough last night and baked the bread today! I baked the bread in 275 celsius for around 40 minutes total. It didn't end up looking as good as yours, but it tasted really nice. Crispy top and soft inside! This video was really helpful.

    back to bread....my own....I used to....but somehow....but thanks to you Master Vincent, I'm back to bread.....my own! Already have a starter going and every other day we have fresh bread....oh my....had forgotten....not a huge loaf but enough...just enough. life is good.

    I followed this recipe and made the most incredible loaf! What have i been doing all these years messing around kneading, olive oil, more kneading.
    Great loaf. Only thing is, make sure you have a big casserole pot that can take 1kg worth of flour. Vincent Rules!

    all right,nice vid.! I recently started to bake my own bread with a sourdough starter and other bread types like irish soda bread (love it!) today i tried your stiring the dough tip with my sour dough before I kneed 15 minutes and i found out that stiring everything first a couple of minutes makes my dough so much softer to work with,much easier for kneeding (by hand) great tip! keep it up with the vids!

    Yes Poilane have their flour stoneground, they also have a bit of rye in it I believe, you can do the same use 5 or 10% of rye and you get much better flavor ;)

    Nick P - Oven temperature: 250C or 480F, but for the record I made the same recipe at 550f and it still turned out wonderful.

    I've been making french bread in a similar method (after kneading and sitting I form and cook it slightly differently), and I have to say that this is a pretty solid video. Thanks for taking the time to show others how to do it!

    Very true! Also if you don't eat a lot of bread, you can let it cool down very well (at least 12hours) then slice it, and freeze portions, so when you need bread you can chuck it straight in the toaster ;)

    Bravo Vincent, tu es trop bon. Certains boulangers français feraient mieux de prendre exemple sur toi. La plupart se dit boulanger alors qu'ils ne sont que des points chauds déguisés. Le bon pain est une grosse qualité de la France qu'elle laisse à l'abandon. Les jeunes ne veulent plus faire ce métier trop contraignant. Tu es l'exemple qu'on peut faire du bon boulot et s'éclater dans la vie. Encore bravo à toi et ne change rien.

    i have a bakery using only whole meal from individual local farms, stone milled in a restored local water mill. we leaven with wild yeast and bake in a wood fired oven. i know you are passionate about healthful, nutritious flour. and real bread, wondered if we could correspond and share notes? and by the way - you deserve your own TV series. your videos are excellent and so entertaining!

    Unless you have a steam oven, the main difference between baking your bread directly in the oven (or in a pan) and baking it in the cast iron pan with the lid on is that in the latter case, the steam remains there and helps with the "oven spring". After the loaf set, Vincent moved the lid so that the steam can escape and the crust can form.

    Measuring by mass is the most accurate way to measure anything! Liquid or solid. Especially when you think about the fact that density changes with temperature. You can see this effect pretty easily if you fill a pot almost to the top with cold water from the tap. then put it on the stove -- as it gets hot (and well before it boils), it will expand to the point where it will spill out of the pot or at least be very obviously taking up much more space.

    I found out that it is a good tip to bake the bread inside the pot! I baked it without a pot because I didn't have one the was big enough. Well the bread cooked a little more from the back side. The pot helps to distribute the heat evenly so that the bread won't overcook from the other side! You can do it without the pot, but make sure to take the bread out at some point and turn it around.

    Bread baked like this freezes very, very well. As soon as the loaf cools, put it in a plastic bag (from e.g. a store-bought loaf), close it with a twist tie and throw it in the freezer. When you're ready to eat it, just thaw it on the counter overnight in the closed plastic bag; the loaf will reabsorb the moisture and feel and smell very fresh once thawed.
