Also, fun fact, Aoi's, Toko's second one, and Junko's BTBs are the only ones where the final line is fully voice acted. "Do you have any kind of proof Sakura took the poison?!" "H-How can you say it wasn't the s-sprinkler?!" "Despair into tomorrow! Despair into your memories! *Despair into nothingness!*"
I think Celeste said it herself; when she knows that she has lost, she prefers to just end it quickly instead of dragging it out. The other killers had their Bullet Time Battles when they were cornered and pretty much proven guilty (Leon after Sayaka's dying message and the glass ball/shirt throw combo, Monokuma after everything with Mukuro was laid out, etc). It would be out of character for Celeste to prolong the voting after all that proof came out.

The entire point of the BTBs is that the opponent characters are desperately refusing to accept the fact that they've been proven wrong (again, like Leon angrily shouting "stupid" despite the piles of proof against him, Taka desperately arguing for Mondo even though Mondo literally just gave _himself_ away with a slip of the tongue, etc). Celeste had a BTB at the _start_ because she was determined to convince everyone of her false perspective (since the location of the dolly was a major clue to Hifumi's true involvement) and there was no known evidence of her guilt as the killer. Once the proof started ramping up towards the end of the trial, such as her sus statement of "those guys" and the coincidence that only she and Hifumi saw Robo Justice, she knew there was no point in hopelessly digging her heels in because she simply had no valid counterarguments. By that point, it was already over and the Closing Argument was just a formality, so there was no point in uselessly dragging out the end. Plain and simple, just the way she _didn't_ want to be.
