I was in Nigeria for 3 months last year doing missions and had the food there. It was superb but all the meats (chicken, beef, goat) were cooked too tough and chewy to eat. It was so tough that it made it too much of a challenge to really enjoy. I believe it must be a cultural thing why the meats are cooked so tough. But the seasoning and flavors are excellent.
