1. Heat the frying-Pan
2. add a little bit of oil
3. Scrambled it evenly
4. Shaped it
5. Rolled it on the pan to give a last touch for the skin
a Good omellette have to be able to roll smoothly on the frying-pan, and the color must be smooth
