Pro Polish tip: due to the presence of honey, the cake can get very hard, so what you usually do is you prepare the cake discs a few days in advance (up to a week) and store them in the fridge to soak up the moisture. If you layer it with buttercream, rather than sour&whipped cream, you can even store it in the fridge layered (yes, up to a week, some say even more). When the cake gets moist it practically has a sponge cake texture :). Anyways, I absolutely love your recipes and the execution, these videos always make me drool and want to recreate them like right now ;). Love your channel!

How is your recipe different? I've seen Medovik made with cinnamon in the cake batter. Some batters thin and poured, others thick and rolled like bread. Some use sour cream or yogurt in the filling. What is your recipe? I'm wanting to make it for Christmas! Thank you!

Well I do use cinnamon in my cake batter, I will chill my batter before rolling it out, like something you would do with gingerbread batter, because it is very sticky and wet looking dough. When it comes to filling I have to use equal parts of Greek yogurt and Philadelphia cream cheese, although in my original recipe it should be made with sour cream, but where I live, it's seams kind of impossible to find sour cream. Through trials and errors, I concluded that mixing equal parts of Greek yogurt and cream cheese gives me desired texture and flavour.
I only treat my family with a cake on Sunday, but now I'm watching this and it's just Monday.. how will I be able to resist until the weekend!?? I guess I will be drooling all week thinking about this Medovnik :)

I wish you both a lot of business success and luck. I am from Slovenia where we also make a version of this cake. It's called honey pie. In December I often add some cinnamon, cloves and ginger in order to make it more Christmasy.
Actually, not entirely. Genuine medovik cream is made only of 30% sour cream beaten with sugar, no whipped cream added. Also, we add crushed walnuts in coating and cover by cookie-walnut mixture the entire cake. Finally, we usually use vanillin, not vanilla extract, because it is cheap and can be bouht everywhere in Russia. It has stronger smell. In fact, authentic Russian medovik is a typical home-made cake, simple and made of rather cheap ingredients, not so dainty as Ella's one.

We've got that lovely cake in Poland!:-) but the filling is usually made from cooked semolina in milk and sugar and when cold soft butter is added to make a delicious filling! It tastes great when sour black currant or plum jam is spread on some of the cakes as well! This is a classic for Christmas and winter for me :-)))
