Something I think might help answer your grey parts question: Orbital Minifigs (formerly called Classic Minifigs) came out with a pad printed Dagobah Luke back in 2022 with a copy of the backpack tile in new dark grey. I found a copy myself a few months ago for $25 so even nowadays you can still find a handful of them second-hand.
I'm for keeping Dagobah Luke all old gray. If you switch the pants to bluish gray it clashes with the rest of the minifigure, while keeping him old gray just makes it look like his unique outfit is a different color than other characters.
Gotta be one off the most respectable collection projects I’ve every seen. I’ve been just paused on the end of the video staring at the display for a while now and it’s taking me right back to my childhood 😂
For the extra toggle you should have the last row be all the big creature characters and then the other rows be minifigs so that it looks uniform (Although if there’s a veritable order they’re listed in the game definitely keep it that way idk if there is though)
If you are going for all dark bluish gray on all the figures, don't forget to change out the Droideka's dark drey parts and possibly the Gamorrean Guard's arms, Turskin Raider's hips & hands :) Honestly, myself I don't mind there being a bit of variation and having the same colours that the official LEGO ones released as are rather than converting them over, just more of a purist approach. Because some of them you have to keep dark gray because of the prints or moulds such as the Geonosian - but I think there's only 1 or 2 like that have to stay dark grey unless you find custom dark bluish gray versions. At the moment, I am currently doing a similar approach to you but just staying purist approach - if LEGO didn't produce the figure I just don't get it, I just get whatever they made. If LEGO produced the same style as TCS but it has a yellow head I don't mind. When laying them out it actually works pretty well as Episodes 1 & 2 have all yellow heads for the most parts besides the different species, Episode 3 doesn't. Episode 4 and 5 for the most part have yellow heads and Episode 6 doesn't. So the yellow head figures don't get mixed up with their prospective figures in each Episode it all is correct, which is surprising. It's actually quite cool seeing the ones I have on display seeing the linage of Episode 1 - Yellow heads, Episode 2 - Yellow heads, Ep 3 - Final episode in that trilogy have skin tonned. There are only a few small modifications I've done to achieve certain figures that might skew the lines of purist such as the eraser trick for Anakin and producing a tan cape for Lando.
An Inaccuracy ive noticed but to my knowledge isn't currently fixable is hans head. In TCS both his model and Icon have a blank face expression instead of the smile seen on Classic than minifigs. I would keep this in mind incase you ever come across a pad printed head with the accurate design
His icon uses Luke's face for some reason (same as the Imperial Officer, Rebel Pilot, and a couple others even though they also don't use that head in-game). One thing to note though is that the characters all have animations for various facial expressions so I think that as long as it's clear that the head could be the same design in a different expression it's alright. (E.g. I'd be fine with the Imperial Officer, Rebel Pilot, etc. using the classic smiley face since that is the same design as they have in-game just smiling rather than neutral, and the Officer actually does have the classic smile at one point in the intro cutscene for RotJ.) The classic Han face is pretty close to his design in-game, though it doesn't have his chin dimple like the in-game version does.
the kaadu is complimented by the fambaa in the game, as they are both found running together in chapter 2 episode 1. i just made a fambaa model this week meant for 3D printing, i would be happy to sell one to you!
I'd say leave the dark gray legs, as I think it stands out more if they mismatch on the minifigure given the proximity.
