- It’s always perfect to have atchara along with our grilled and fried foods. It requires a a bit of preparation but we assure you, it’s worth it!
INGREDIENTS:
Set A:
6 cups shredded green papaya
1 piece carrot, shredded
2 tablespoons rock salt
1 piece red bell pepper, cut into strips
1 piece medium-sized ginger, cut into strips
1 cup raisins
5 cloves garlic, sliced
2 pieces red onion, cut into strips
Set B (Pickling solution):
3 cups Datu Puti White Vinegar
2 cups white sugar
1 teaspoon salt
2 tablespoons whole peppercorns
1 teaspoon turmeric powder

Sa mga foreigners hindi pinakukuluan ang mga vegetables pag nag sour craft at sinubukan ko rin. Ok rin.

You mentioned you make a big batch. Is it ok not to refrigerate it even after opening? Kasi soaked in vinegar naman Diba? Also if I like the papaya and carrots in thicker cuts ( like french fries) how is that, I don't have to squeeze it na or should I still do?
I'm from Iloilo. This is similar to how my mother makes atchara. And she also uses turmeric. 🙂

Chef, ok lang po ba ilagay yung papaya kahit mainit pa yung vinigar mixture. Di po ba maluto yung papaya?
Palamigin muna ang mixture bago ilagay ang papaya.
Chef in preserving it need po bang lagay sa ref? Or room temperature pwede na?
For longer life shell, need ilagay sa ref
May pwedeng substitute po ba sa sugar?

Medyo tumaas po kilay ng Mama ko nung nakita nya na nilagay nyo po yung papaya and other ingerdients sa pickling solution while still hot. Sabe nya po e dapat daw pinalamig muna ng kaonti.
Ibat-ibang region may kanyang-kanyang style kamo. Etong style na ito works for me kasi a little heat (na hindi namang talaga pinatagal sa video na ito) will help infuse all ingredients together bago pa man i-bottle up.
Sana yung ingredients may weight din. May mga tao din kasi na di nag me-measure in volume.

Sir hindi po ba makakaapekto yung onions if matagal po siya mababad?hindi po siya mabilis nasira?mga ilang weeks po siya mag tatagal pag may onions po?
Matagal masira pag pickled veggies ksi hindi nagssurvive mga bacteria sa concentrated vinegar.
Chef, pwede po ba honey melon for achara? May nabuksan po kasi ako medyo hilaw pa eh sayang naman.

Ilang months po ba ang shelf life nya in room temp.?
Dahil pickled ito and mataas ang acid content technically mapepreserve mo sya ng at least 1 year (assuming malinis ang jar/container mo at walang water molecules)

@cedoniaventures8258 if you rewatch it sabi ni chef na pwedeng umabot ng 1 taon. Ginawa ko itong recipe and months lang inabot naubos agad. As long as nasa ref siya
