My heart was sucked into my knees when that water hit the floor! For brining my turkey, I purchased a plastic bin. It is only used to brine my Thanksgiving turkey. I have to clear a lot of stuff out of my fridge, but it holds a 12 lb turkey and all the brining liquid no problem, no spills--just HEAVY. Also, just a tip, you don't have to heat an entire gallon of water to dissolve your brining spices. I usually heat about 4 cups of water and then pop everything into the water. Once the salt is dissolved, I let it simmer for a few minutes and then pour it into some iced water. Cools it down a lot faster that way and I don't have to wait as long to get on with my meal prep.

@@caridadeno5777 That's the whole point of the brine. The salt gets absorbed into the turkey, salt attracts water, so it makes the turkey flesh pull in the water. You would think the turkey would come out all salty after you cook it, but it doesn't. Things come out tender, moist and very flavorful.

After several turkey trials in the instant pot, I think Im getting this dialed. I brined it before. That's a great start! I had a 9lb turkey... first I dried it off really good with a towel, shoved a whole stick of butter pats under the skin, rubbed with cajun seasoning and olive oil, poured IPA beer, pickle juice, Worcestershire sauce in the bottom below the wire rack keeping the meat above the liquid. Cooked for 6min/lb 15 minute rest, then put it in the oven for 5 min under the broiler which crisped that skin up to perfection. I just put the metal instant pot in the oven... was no problem.
Pro tip for mixing cornstarch and water, put the water and cornstarch in a small jar and shake it to mix the two together. This way you do not get the cornstarch lumps. It really speeds up the mixing process.

As an MD, I'm terrified of stuffing a turkey, then roasting it in the oven, and hoping to actually live to see December. Great idea, other than having to buy a new, 8qt IP. Final word to the world, nothing, absolutely nothing beats a BRINED turkey! I think 12 hours is too short a time, that would be fine for a chicken. My brother and I have experimented with a 2 day brine, he prefers it, I didn't see any improvement in the flavor compared to a 1 day brining, and the bird was a bit salty. All in all, yet again, I'm filled with inspiration. Oh, I love your mom's accent! Just when I thought my wife's Brooklyn couldn't get any stronger, your mom sounds like all of my New York relatives... Ah, holidays.
I would have used a wand whisk and mixed in the cooked veggies as well to make the Gravy and whilst the Turkey was finished off in the oven cooked some fresh veggies and potatoes. Here in the U.K our equivalent is our Christmas Dinner, Turkey with all the trimmings and the main reason we oven roast ours is because that includes Roast Parsnips and Potatoes which are Par Boiled the cooked in the Roasting tray for and hour with the Turkey (I also like to oven roast whole Onions)

Perfect! I have a almost 12 pound turkey breast bone in wishing I could put it in my 8 quart Instant pot but I don’t think it’s gonna fit. So I’m going to roast it in a cooking bag in the oven which should make it moist too. This looks so so good. The only thing I would change is I would strain the turkey drippings from the pot before making the gravy. I like a smooth gravy not chunky. Thanks for sharing.

We do the stuffing on the side. I use a wine cooler in the cavity. Then I take an orange and rub the outside and toss the oranges into the cavity. So good.

I take about 2 tablespoons of italian seasoning, 1 of powdered onion, garlic and salt and pepper mince real fine in coffee grinder.take about 2 or three sticks of butter mix together.using a basting brush and basting needle brush and get under and into flesh of meat.basting every so often.I also break the back and breastbone.cooking it upside down makes it so tender it melts in your mouth.I'm 75 so been doing it this way for a long time.

Most of them end up in storage, other than my crockpot, food processor, and Kitchenaid mixer. But you sold me on the Instant Pot! I bought a insta pot last year and this year my son got me the insta pot electric pressure cooker air fryer lid love it makes a awesome rotisserie chicken hamburger French fries onion rings one thing now dont have to put whatever I'm browning in the oven after pressure cooking
I really enjoy your recipes and will try this when turkeys are on sale and I have friends over. However, Thanksgiving requires a bivger bird in my household so not very feasible using the Instant Pot. My comment is regarding the directions for the turkey brine and stuufing. I don't recommend putting warm brine in the fridge as it will raise the inside temp and possibly affect the contents of other items in the fridge. My solution is to make the brine while the turkey is thawing in the fridge. This way you can be sure that the brine has cooled enough before putting it in a freezer ziplock bag and storing it in the fridge. Also I suggest that you make the stuffing while the turkey is thawing and then storing in the fridge once it's cooled down completely. It's never a good idea to stuff the turkey with hot stuffing. Otherwise, I will definitely try a turkey and trimmings in the IP. Thanks
You could also just make 2 turkeys in the IP, one after another, since its relatively quick and more moist. By the time the first one was eaten, the 2nd would be ready to go.
To brine on your own, 1 cup pf sugar and 1 cup of kosher salt per gallon of water used. I also add some orange juice concentrate and various spices. Adding poultry spices and then sage, thyme etc is somewhat redundant, since that's what poultry seasoning mostly is. I really don't see the point of brining in a bag if everything goes in a stock pot anyway, other than preventing sloshing. I've been brining turkeys and briskets for over 20 years and I always use a 5 gallon stock pot even for turkeys over 20 pounds. Just weight the turkey down with a heavy plate so it is completely surrounded by the brine. Briskets go in stainless steel food service trays. Usually it's cold is much of the US in late November, and if you're lucky enough, you can brine outside without using up fridge space, but if you don't have enough space in your fridge to brine for a day or two, then putting the bag in a good medium sized COOLER and then adding ice on top will do the trick. And instead of thickening with corn starch or a flour roux, take the drippings with the vegetables and put them in a blender. Then add corn or flour thickener if needed. I'm not sure what the Better Than Gravy is there for. Oh, and the best way to cut turkey breast (there are videos, of course!) is to take a really sharp knife (which you'll need anyway for such tender and juicy meat) and cut the entire breast off the bone starting at the keel and alongs the ribs, 30 minutes after the bird has finished cooking to rest it, and then cut across it horizontally ACROSS the grain of the breast. Then each diner will be treated to visually appealing medallions of white meat, rather than unsightly shreds like pulled pork.
I didn't see any roast potatoes. I am from England UK and we have roast potatoes with all our meats, as well as Yorkshire pudding. Some have a combination of roast boiled and mash, although for me that is a bit much. I am still a learning as I have only just got my 8 qrt instant pot duo a month ago. I have been waiting a long time to get one, as we did not have them over hear and the postage and tax to order from the US was too expensive. Then recently I saw them come up and was able to get mine. I love it and it has really changed my life. It is Christmas day today and we are having a Turkey Crown. You can stuff the turkey full if you're using a high pressure cooker in an oven at 350 for 6 hours is a little bit different but also I like the comment about the butter on the skin before the oven versus the paint

Rather than Gravy Master. I would brush the turkey with butter. margarine, or olive oil. It will still get a golden brown with great flavor on the skin. Turkey meat looks great! 😊♥️

I brine my turkey inside an insulated camp cooling chest. It will never leak or spill like bags. Make sure to dump a massive amount of ice in with the turkey brine so it can stay cool overnight. An 7 to 10 lb turkey with brine and 2 lbs of ice and ice water will stay cool easily for 12 hours while sitting outside of the fridge. It's also safer to dispose of the brine out of the chest than a bag. Clean out your camp chest with soap and water and disinfect with isopropyle alcohol or Dettol antiseptic since it was holding raw meat.

One huge fridge. Once you brine you never go back. Id go with a zip lock bag - ordered from William Sonoma - rinse for about 15 minutes. Smart to shorten timing so it doesn’t fall a part. Your channel is truly the best. Im spatchcock my turkey this year. In oven.only takes about 1 1/2 hours. Happy Thanksgiving to you and your family!
I have never brined a turkey before. But I often see a lot of friends (American friends actually) mention it. I'm going to have to try this, and now to go on the hunt for the brine mixture or google the heck out of it for a "recipe". Your dinner looked fabulous Jeffrey! I only ever do that size of bird for our small family, so maybe I'll give it a go! I make all my sides in the IP the day before so they only need to warm up in the oven while the turkey is sitting after coming out of the oven....this could still work.
OMG! We had the same platter from the 60’s when I was growing up!😂😂. This turkey looks soooo good! There is just 2 of us, so I’m going to try this method with a large chicken.

I almost cried when I watched this. My grandmother used to stuff her turkey the same way. I loved to eat cold stuffing out of the leftover turkey in the fridge - I think these days they say that will kill you. This all looked so homey; not the perfect stuffing from a box or Martha Stewart. I'm vegetarian now and just eat the side dishes, but this video, with the gravy and the turkey platter - how utterly charming and nostalgia-inducing. It makes me miss those old family meals at my Nana's.
My Mom used to stuff the turkey, but I haven't only because of cooking it in the oven, the blood drip's into the stuffing, BUT I must say I have changed my mind, only because of the way the turkey is placed neck down, that way the blood goes down into the pan, but I would have cut most of the neck that was left on and the ,excuse me, ass of the turkey off, it probably would have fit better, I cringed when I saw how overstuffed the IP was, but it turned out good, will be doing this for Thanksgiving, saves time and I have the 8qt IP,
I brine my turkey every year in a stock pot so when you showed the bag opening in the lasagna pan and brine going everywhere I think my beverage came out my nose!

I use my instant pot 4 to 5 days a week, definitely a great kitchen counter staple.

My solution is to make the brine while the turkey is thawing in the fridge. This way you can be sure that the brine has cooled enough before putting it in a freezer ziplock bag and storing it in the fridge. Also I suggest that you make the stuffing while the turkey is thawing and then storing in the fridge once it's cooled down completely. It's never a good idea to stuff the turkey with hot stuffing. Otherwise, I will definitely try a turkey and trimmings in the IP. Thanks
You could also just make 2 turkeys in the IP, one after another, since its relatively quick and more moist. By the time the first one was eaten, the 2nd would be ready to go.
To brine on your own, 1 cup pf sugar and 1 cup of kosher salt per gallon of water used. I also add some orange juice concentrate and various spices. Adding poultry spices and then sage, thyme etc is somewhat redundant, since that's what poultry seasoning mostly is. I really don't see the point of brining in a bag if everything goes in a stock pot anyway, other than preventing sloshing. I've been brining turkeys and briskets for over 20 years and I always use a 5 gallon stock pot even for turkeys over 20 pounds. Just weight the turkey down with a heavy plate so it is completely surrounded by the brine. Briskets go in stainless steel food service trays. Usually it's cold is much of the US in late November, and if you're lucky enough, you can brine outside without using up fridge space, but if you don't have enough space in your fridge to brine for a day or two, then putting the bag in a good medium sized COOLER and then adding ice on top will do the trick. And instead of thickening with corn starch or a flour roux, take the drippings with the vegetables and put them in a blender. Then add corn or flour thickener if needed. I'm not sure what the Better Than Gravy is there for. Oh, and the best way to cut turkey breast (there are videos, of course!) is to take a really sharp knife (which you'll need anyway for such tender and juicy meat) and cut the entire breast off the bone starting at the keel and alongs the ribs, 30 minutes after the bird has finished cooking to rest it, and then cut across it horizontally ACROSS the grain of the breast. Then each diner will be treated to visually appealing medallions of white meat, rather than unsightly shreds like pulled pork.
I didn't see any roast potatoes. I am from England UK and we have roast potatoes with all our meats, as well as Yorkshire pudding. Some have a combination of roast boiled and mash, although for me that is a bit much. I am still a learning as I have only just got my 8 qrt instant pot duo a month ago. I have been waiting a long time to get one, as we did not have them over hear and the postage and tax to order from the US was too expensive. Then recently I saw them come up and was able to get mine. I love it and it has really changed my life. It is Christmas day today and we are having a Turkey Crown. This is my third year coming back to this video for my thanksgiving. Has been perfect the last two years. My only struggle is finding a whole turkey under 10 pounds
You can stuff the turkey full if you're using a high pressure cooker in an oven at 350 for 6 hours is a little bit different but also I like the comment about the butter on the skin before the oven versus the paint

Rather than Gravy Master. I would brush the turkey with butter. margarine, or olive oil. It will still get a golden brown with great flavor on the skin. Turkey meat looks great! 😊♥️

I'm trying a 9lb turkey right now. I hope it's moist and delicious. I didn't fo this brine. I did butter and spices shoved between the skin and meat. No stuffing.

I brine my turkey inside an insulated camp cooling chest. It will never leak or spill like bags. Make sure to dump a massive amount of ice in with the turkey brine so it can stay cool overnight. An 7 to 10 lb turkey with brine and 2 lbs of ice and ice water will stay cool easily for 12 hours while sitting outside of the fridge. It's also safer to dispose of the brine out of the chest than a bag. Clean out your camp chest with soap and water and disinfect with isopropyle alcohol or Dettol antiseptic since it was holding raw meat.

One huge fridge. Once you brine you never go back. Id go with a zip lock bag - ordered from William Sonoma - rinse for about 15 minutes. Smart to shorten timing so it doesn’t fall a part. Your channel is truly the best.
Im spatchcock my turkey this year. In oven.only takes about 1 1/2 hours.

I have never brined a turkey before. But I often see a lot of friends (American friends actually) mention it. I'm going to have to try this, and now to go on the hunt for the brine mixture or google the heck out of it for a "recipe". Your dinner looked fabulous Jeffrey! I only ever do that size of bird for our small family, so maybe I'll give it a go! I make all my sides in the IP the day before so they only need to warm up in the oven while the turkey is sitting after coming out of the oven....this could still work.

I almost cried when I watched this. My grandmother used to stuff her turkey the same way. I loved to eat cold stuffing out of the leftover turkey in the fridge - I think these days they say that will kill you. This all looked so homey; not the perfect stuffing from a box or Martha Stewart. I'm vegetarian now and just eat the side dishes, but this video, with the gravy and the turkey platter - how utterly charming and nostalgia-inducing. It makes me miss those old family meals at my Nana's.
My Mom used to stuff the turkey, but I haven't only because of cooking it in the oven, the blood drip's into the stuffing, BUT I must say I have changed my mind, only because of the way the turkey is placed neck down, that way the blood goes down into the pan, but I would have cut most of the neck that was left on and the ,excuse me, ass of the turkey off, it probably would have fit better, I cringed when I saw how overstuffed the IP was, but it turned out good, will be doing this for Thanksgiving, saves time and I have the 8qt IP,
