Pre-shredded cheeses don’t have added oils, in fact they typically have a small amount of some kind of starch to keep the cheese from sticking together. More oil would make the cheese even stickier. Cheese is about 1/3 fat, when it's melted the fat comes out, too much cheese makes a pizza into a greasy mess with all the toppings sliding off it and the dough raw but more cheese=better pizza according to many a corpulent dunderhead

This is part of the traditional soul. It is not something you can wrap up in a plastic bag. It is a poor man's food, made on the go. Anything that is fresh and farm-based can go on pizza. Yes, you can go and make a lot of crazy pizza with 20 types of cheese, but the core is always tradition and family. Natural taste. Made with love. Never forget this.

Not really. It's the mozzarella used. Italian pizza uses fresh mozzarella with milk still inside. American pizza uses low moisture mozzarella which seeps insane amounts of oil as you said. Temperature has nothing to do with why italian pizza is not oily.

The American pizza is so greasy because of the cheese (mind you it's a fake cheese, this adds to the grease). The Italian pizza is perfect besides being way too small, just an inch larger would make the perfect medium pie.

if you think that’s a lot of grease, you should see the school tacos, it’s literally a burnt microscopic tortilla with a slice american cheese, moldy ground beef, and so much oil that it puddles at the bottom of the container
