an AMAZING homemade cheese sauce recipe which I use for mac and cheese, lasagne and other bits is you melt a few knobs of butter over a medium heat, add 1/4 cup plain flour and stir to make a roux, whisk in 2 cups of milk and 1 cup of veg stock (1 stock cube and 1 cup of water), and cook until it's thickened and then add cheese of choice! I typically do, a whole ball of mozzarella, 1/2 block of cheddar and a bit of parmesan, it makes quite a bit of sauce so you can freeze it in batches and take out and defrost as needed :) I bet it would be so good with cheese pie, I'm definitely going to try it!

Ah ok, I had visions of it being like cheese and potato pie with a pie crust as some pubs still do that. It's cheesy mash in the oven! I would add pancetta to it.
LOL. the rise in cost of living doesn’t mean we should all turn to have a beige diet 😂 it’s so unhealthy and lack any nutrients. Add spinach, peppers, use homegrown veg. Me jules has no qualms in splashing the cash on designer clothes anyway so she use be able to afford decent food
Yum, I make this but with a stronger cheese and no onion, I like tomatoes on top of mine, My husband likes his served with a nice quality sausage and with beans. I've never tried it with the cheese sauce but will give this a go next time I make one. Well Done Julie! x

This recipe could probably be vastly improved by frying the onions first and replacing the mild cheddar with extra mature cheddar and Gruyère cheese on top

In America we make something similar called twice baked potatoes. The difference is we usually bake the pot then scoop all the insides out and make them just how you did but instead of putting them in a dish we scoop them back into the shell from the bake potatoes and add bacon, green onions and sprinkle with cheese and then bake . What is the calibration of your oven. We have ours in degrees and if I baked anything at 200 it would never get done. Most things in America start at 350 degrees.
I have never heard of this. You could eat this with everything and really, it’s kind of up to you how strong you want it to taste as you could go for any cheese flavour. I’m Going to try this over weekend. Thanks.
Awesome its a great dish for many and you could make many different variations of it like adding fresh chives, garlic, onion or using different cheeses or a topping for other recipes like cottage pie 🥰

I'd probably substitute those white onions for red ones and maybe use a strong cheddar or red Leicester, but as you say, you can add anything - I have a similar dish so may give this a go now as looks very easy and would be great to bung in the oven with a tray of roasted veggies too - I hope you ate that potato off the spoon when you'd put the last bit in the pie dish, that's the cooks perk - although whether the cheese would have lasted as long with me would be a different story, as I'd be a bit for the pie and a bit for me LOL. This looks so delicious. Ingredients are definitely going on my next grocery list. I'll have to come up with a substitute for the cheese sauce though as I've never seen it here. There is one grocery store here that has a small British section, but I've only seen the brown Bistros gravy there and they seem to be getting fewer items than they did a few years ago. What other cheeses have you used in the past? Have you ever used more than 1 type at a time? I imagine one could make cheese pie several times and have a different tasting dish each time.
