I Made Homemade Brown Sugar Boba Milk From Scratch

- I made the wildly popular brown sugar boba milk from scratch!
You guys asked for it, so here it is, my homemade brown sugar boba and brown sugar boba milk recipe. This should make enough for about two drinks, or if you want to go all out like I did... Just enough for one, haha.

Ingredients:
BOBA
25g brown sugar (2 tbsp) (dark brown sugar/dark muscovado sugar)
30ml water (2 tbsp)
Tapioca starch 45 g (6 tbsp) + extra for dusting
BROWN SUGAR SYRUP
50g brown sugar (1/4 cup)
40g water
Steps:
1. Combine brown sugar and water in a sauce pan and heat until sugar has melted.
2. Remove from heat and add 1 tbsp of tapioca starch into brown sugar mixture, stirring continuously. Once dissolved, return to heat and cook until slightly thickened.
3. Remove saucepan from heat and add in rest of tapioca starch, mixing until roughly combined (it will be lumpy and that’s okay).
4. Dust work surface with tapioca flour and roll out dough. Continuously knead dough until smooth and round.
5. Roll dough out into a log shape and cut into 3 sections. Keep the other two sections wrapped while working on the first.
6. Roll the dough out until roughly 0.5/0.6 inch thick and cut into smaller, individual pieces. Roll each piece into a ball shape and set aside with a light dusting of tapioca flour. Repeat with remaining dough. Work fast for these steps since the dough will become harder and more crumbly as it loses its heat!
7. Cook boba in boiling water. Once all boba float to the surface, lower heat to low and keep cooking for 15 minutes. Turn off heat and cover with lid, letting boba sit for another 10 - 15 minutes.
8. Drain boba and rinse with cold, ice water.
9. Melt brown sugar and water in a separate pot and add boba. Cook till syrup has thickened.
10. Serve immediately with milk or milk tea! (And dalgona coffee, if you’re feeling fancy)

I worked in a very famous brown sugar bubble tea chain, and the best way to get your bubble the most brown sugar infused taste is to roast your brown sugar on low heat first, then add your boba together! (don't add water!) we use dark brown sugar powder instead
Important tips : don't ice your boba! After it is cooked, drain it and leave a little bit of the cooked boba water with the boba and put it aside let it stay warm. After that you can start stir fry your brown sugar (guys remember just brown sugar, no Oil or anything)
what part do you not add water?
@@makenna6063 at 4:35 she added water and brown sugar together to soak the boba. From our shop, we stir fry the brown sugar first (low heat for around 3mins) then add your cooked boba. After that, continue to stir your boba and brown sugar for around 7mins. Note that there's no water involved! After that let your boba sit for at least 30mins and it is ready to serve!

For anyone who wants to make it, here you go: * add two tablespoons of brown sugar ( dark or whichever) and three tablespoons of water ( always add a third extra water to make sure it doesn’t burn! )
* turn on stove and put it straight on low heat until sugar has dissolved ( keep mixing and avoid leaving it alone for too long! )
* add a small amount of tapioca starch/flour ( normally one teaspoon but add more after if needed! )
* keep mixing with the heat on low and make sure the starch/flour is dissolved ( small lumps are fine! )
* as soon as it turns slightly thick/syrup-like turn off the stove
* add in tapioca starch/flour and mix until doughy
* remove mixture and knead by hands adding in more flour/starch as needed
* as soon as dough is prepared, cover 3/4 with cling film to ensure that the dough won’t harden ( if it does just add a small amount of water: around two small drops just to soften it )
* Roll the dough into a long shape, about the size of a pen but slightly thinner
* cut small pieces ( around a half centimetre or one centimetre ) and roll into small balls
* coat the balls in tapioca flour/starch to make sure they don’t stick together
* boil a pot of water, make sure the ratio of water to tapioca pearls is like if you would make pasta ( Do not add the pearls into water and then boil as they will melt and stick to the pan, always boil the water so it’s bubbling then add the pearls! )
* Boil until the tapioca pearls float to the top ( don’t turn the heat down until they rise to the top but if it you really need to turn it down then only lower it slightly! )
* when all pearls have floated to the top then put the heat on low and let them cook for fifteen minutes
* after fifteen minutes, turn off the stove and cover the pot with a plate or lid for another fifteen minutes
* after the fifteen minutes are over, add ice and cold water to a separate bowl and then add in the tapioca pearls ( if you add them in whilst the pearls are cooling then the ice could melt and the gooey ness will remain on the outside of the pearls! )
* Remove the tapioca pearls after about 1-2 minutes in the water and ice and then enjoy
* p.s if you mess up, it’s totally fine! I wrote this as I went along and got each one perfect, the first step took me 4 tries!

what if you flatten the boba dough with a pasta roller and made boba noodles, place them in a cute bowl half filled with milk, with some ice cream and maple syrup and greean tea infused fresh creaem/ ice cream, topped with bright colored fruits like strawbs or bananas, call it boba parfait. bam thats a free content on the house.

That sounds amazing! There is a Hmong Dessert that is similar to what your talking about. No icecream tho, but we make different tapioca designs and put the tapioca into coconut milk and sugar. I like to put lychee and mango (fruit isn't traditional, but why not?) in mine. It's called Nab Vam (Na- Va).

Inga: 25g brown sugar (2 tbsp) (dark brown sugar/dark muscovado sugar)

They are very CLEARLY different. I understand you want to support your favorite creators, but this is kind of ridiculous.

I made this, turned out amazing! The only thing I highly suggest is that once you finish making and rolls your tapioca balls, Refrigerate them for 10-15 minutes, if you don’t then while you’re cooking the pearls, they can easily get mushed or break apart.
I *wish* I saw this before I started boiling them.

Yep that just happened to me! I made it again and if any one needs this make sure you wait until the water is BOILING THEN add them. Put the heat on high and KEEP stirring for about 4 minutes. Then stop and take a break.
ass smacker let the water boil! If you let it boil first, then they’ll form the layer on the outside, assuring the boba won’t melt! Hope it helps next time you make it ☺️

TIP: I realized I had too much starch in mine, so I threw each 1/3 part into the pot on low heat for 10 seconds or so with ab 2 tsp of water added to it and stirring It so it'll be a little more sticky and softer and worked perfectly

JUST MADE THIS A FEW MINUTES AGO ITS DELICIOUS
i made this today + it turned out AMAZING, literally the best boba ive had since it was so fresh. a few notes for anyone interested in making it-
-you can find tapioca starch/flour at wal mart in the alternative baking ingredients section! a big bag cost $4!
-if you want to make it into milk tea u can take 2 bags of black tea + pour 8oz of very hot/boiling water into a cup for 3-4 minutes, remove bags let it cool, pour milk over the boba + add the tea at the end and it will be perfect!
-if you use regular dark brown sugar instead of the special kind the boba balls and syrup can be a lot lighter, but it still tastes the same ! just make sure the texture is right
-the balls dont have to be perfectly sized/round, itll still turn out good ! my “dough” was a bit crumbly/dry, but i just went along with it and it still turned out good
-along that same line a drier dough is better! the more you knead it the drier it will becomec since the moisture will soak into your hands!
-if you coat the sough in tapioca starch and the starch dissolves into the dough after a few minutes that means your dough is too wet and it wont cook all the way through (which will make it powdery/grainy at the core) and you need to knead it more!!
-there was a lot of sugar in the syrup like she said, so it will be super sweet! next time ill add more milk/tea and split it into two portions to combat the sweetness
-i froze half of my boba pearls and cooked them the next day and they were still good! i took the uncooked boba balls (w/the tapioca starch coating already on them so they dont stick together in the freezer) and put them in a plastic bag with all the air squeezed out. when i made them i let them defrost in the bag while the water boiled, then sprinkled a little more tapioca starch into the bag + coated the boba right before i put them in, still following the same instructions

They seemed a little more chewy/gummy than yesterday, but i think i cooked them a bit longer so that might have been why. i did only freeze it for a day, but i'd imagine it should be okay to stay frozen for a long time since theyre pretty stable ingredients

Just made this and it turned out so good! I drank it with some earl grey milk tea and it was 🤌🤌 the pearls were very chewy, but just on a side note that if they get crumbly and dry when rolling them into balls, I suggest to have some water on the side to help it make it easier to roll. And this made about 1 serving for me, so double or triple if needed

@@444milko.9 At some grocery stores you can buy the tapioca starch, but if you are planning to buy online, you should honestly just buy the boba tapioca pearls and not the starch. I have made boba tapioca pearls by hand multiple times before and forming the balls is lowkey tedious process. You can buy the boba tapioca pearls on amazon for around $5 (which should have a lot of serving for it), but if you want the experience of making it yourself you should be able to find the tapioca starch at your local grocery store or online for around $3.50. Good luck if you do it by hand!

Even handmade ones weren't meant to be individually rolled one by one, you swirl it around in a huge round plate like basket.
Oh lol I made this with cornstarch because I have never had boba before and I rly wanted some and it turned out pretty good (keep in mind I have never had real boba before) but it was chewy when I tried it when it was cooking but once I ran it under cold water it got more of an orbeeze texture how it like brakes in half (that’s an exaggeration but a good way to describe it ) but overall it was pretty good

just tried this today and it turned out so well! at first after i dumped the starch in it was really dry and crumbly but if u add a bit of water bit by bit the dough will come together. the dough felt slightly more on the hard side but the finished boba balls were qq

when i cooked my boba for 20 mins the inside wasn’t “cooked” the cooked part was transparent while the uncooked part was still opaque and was powdery... :(
Was it already prepared boba or did you make the dough yourself?
I would suggest, if you boil it for 20 minutes, let it stew for 20 minutes as well.
@@jes2540 made the dough - then i cooked it even more, in total an hour and it still wasn't cooked through all the way. my boba balls i made was smaller than the average size boba.
I had that result too. I tried again 2 more times and decided to add a little less tapioca starch. It cooked a little better the 3rd time, but I'm going to try again today

even if the inside is opaque, it still could be cooked. as long as there isn’t legit power (like the tapioca starch) and it has an ok texture and tastes good, then i think ur ok

Same thing happened to me!! I made some yesterday and no problems then i try again today and both batches ended up crumbling into powder and i couldnt get it to form a dough i might try a diff recipe

Just made them and it was so good. yes rolling them into balls was very time consuming I almost gave up on it because I got bored of it and tired from rolling them. Overall this is a great recipe.

This looks great! The only thing I would probably change is the ice cubes, instead of water I would make ice cubes out of milk! That way it doesn't get watery!
The pearls came out having a starchy uncooked taste even though they were fully cooked, even mushy kind of :( anybody else have the same thing happen?
