Mango Crepe Cake | Honeykki 꿀키

  • Today’s dessert is mango crepe cake.
    I personally adore the mango and passion fruit combo, so I alternated the mango and passion fruit layers. The fresh Chantilly crème and crepe layers make a great combo. I made this with an anticipation for spring, and loved it.
    You can use strawberries and raspberry puree instead of mango and passion fruit puree, it will still be a delicious cake. If you buy ready-made Genoise cake, you can make this without an oven. I hope you give this a try.
    * Sponge cake (for 1 at 18cm diameter)
    3 large eggs (120g), 80g sugar, 70g cake flour, 20g butter, 20g milk, 1/2 tbsp vanilla extract
    I made the sponge cake one day ahead of time.
    Remove the parchment paper and use a square bar to cut into 1cm-thick slices.
    * Crepe (made with 24cm diameter pan)
    80g cake flour, 40g sugar, 2g salt, 2 eggs, 15g melted butter, 250g milk
    1. Whisk together cake flour, sugar, salt and eggs in a mixing bowl.
    2. When the flour has completely integrated, add melted butter and whisk.
    3. Slowly, add in milk as you whisk.
    4. Strain in a sieve and chill in the fridge before use.
    5. Heat the pan slightly hotter than low heat, take some butter on paper towel and coat the pan.
    6. Pour 50ml batter in the pan and make thin sheets of crepe by whirling the pan.
    7. Use chopsticks to separate the edges and flip.
    8. Flip, cook the crepe for 1 more minute and remove.
    This recipe will give you 8 sheets of crepes.
    Only 5 of them will be used in this video.
    I wanted to make some extra in the recipe to give room for mistakes.
    If all of your crepes came out perfectly, choose the prettiest ones.
    * Cream
    Whipped Chantilly cream : 330g double cream, 30g sugar
    Passion fruit cream : 300g double cream, 100g sugar, 100g passion fruit puree, 1 sheet gelatin, 150g cream cheese
    1. Soak the sheet gelatin in cold water
    2. Warm the passion fruit puree in a microwave.
    3. Add and mix the gelatin into the puree.
    4. Beat and soften cream cheese in a mixing bowl, add sugar and beat some more.
    5. Add the puree and mix thoroughly until homogenous.
    6. Add double cream in another mixing bowl and whip lightly.
    7. In the puree mixture, mix in the double cream.
    8. In another mixing bowl, add double cream and sugar together, and whip hard.
    9. Keep the cream chilled in the fridge.
    10. Whip up the cream before sanding, and fill up the piping bag.
    * 2~3 mangoes for topping
    Peel and cut the mangoes, and keep them on paper towel to remove excess moisture.
    If you skip this step before topping them, it can make your cake soggy.
    * assemble
    1. Load the 1cm cake Genoise slice on the cake turntable.
    2. Spread a thin layer of passion fruit cream.
    3. Cut the crepes to the size of the Genoise and lay it on top.
    4. Thickly pipe the Chantilly cream on top and lay the mangoes.
    5. Layer another crepe and top with passion fruit cream and mangoes.
    6. Repeat this step as many times as you like.
    7. Chill the finished cake for at least 2 hours in the fridge.
    Use mousse strip or ring to hold the shape on the edge of the cake.
    8. Cut the finished cake into 6 slices and decorate with cream and mangoes.

    That combination of tastes and textures - crepes, fruits, cream cheese, whipped cream and sponge cake - looks soo intruiging. It must be devilishly delicious! I wish one day I will be able to visit Korea and try one of Honeykki's marvellous desserts at her cafe. P.s. I don't know if Honeykki owns a cafe, but her skills definitely worth to be appreciated in actual reality, not only virtual.

    집에서 크레이프케익을 몇번 만들어봤는데 크레이프 자체가 아~주 얇지 않은 탓인지 괜찮은 레시피를 못찾은건지 그럴싸해보여도 뭔가 좀 질기고 맛이 덜하더라구요. 이렇게 단을 적게 쌓으면 특유의 스페셜한 느낌은 그대로 있구 훨 편하고 맛날거같아요
