Ingredients:
500g cream cheese
300ml condensed milk
1 tsp vanilla essence
2 tsp lemon juice
1 tbsp gelatin (prepared as per package instructions)
2 tbsp water
2 cups (265g) digestive biscuits
6 tbsp butter
2 tbsp sugar (optional)
Instructions:
Prepare the pan and crust.
Mix crushed digestive biscuits with melted butter to create the crust.
Blend cream cheese, condensed milk, vanilla essence, and lemon juice to make the filling.
Dissolve gelatin in water and add to the filling mixture.
Allow the cheesecake to set.
Once set, remove from the pan and slice.

Hi Safa, happy to know that you like the recipe.I microwave gelatin to properly dissolve it in water, you can also add hot water. I don't think gelatin works by just dissolving in room temp water and adding to the mixture.By the way which brand of gelatin do you use? I always say use gelatin as per package instructions.

You can serve the cake after 8 hr of resting, but 24 hr is better for taste and texture.
It's better to add ganache afterward and let it rest for 30 min in the fridge.

Hi MsNicky, thank you for your interest in my recipe. After adding a whole tin of condensed milk, the cream cheese mixture needs gelatin to set. The gelatin used is without any flavor.

@@SweetandSavory sorry, wht i mean is.. usually iam making cheesecake add on whipping cream even i put gelatin on it, once 10minute out from fridge it texture cheese base became soft.. i wonder if your cheesecake became easily soft and melt after 10 minute out.. cuz i am outdoor cake seller.. i always have problem with cheese cake became soft in room tempt
I never have this problem with cheesecakes. If your cheesecake becomes loose, then there could be 4 reasons:
1: Your gelatin is expired
2: You are not adding enough gelatin
in a proper way. Watch the video carefully to see how to add gelatin.
3: You are not using the right cream cheese. PHILADELPHIA CREAM CHEESE is the best for cheesecakes or any cream cheese that comes in block form.
4: You are adding too much whipping cream. To every 250gm cream cheese, add 1/4 cup whipping cream only.
