TRINI CURRY ALOO 🇹🇹 / CURRY POTATO - trini style homecooking (#6)

A classic dish that pairs well with all types of ROTI, this recipe is perfect for cooking at home anytime!

INGREDIENTS- (serves about 4 people)- cooking time 20-30 minutes
POTATOES- 6 medium - peeled & thinly sliced or cubed
ONION- 1 medium- finely diced
GARLIC- 3 cloves- finely diced
CILANTRO / SHADOW BENI- few sprigs or 1/4 cup- finely chopped
PIMENTO- 2 finely diced
ROASTED GROUND GEERA- 1 tsp
GREEN SEASONING- 2 TBSP
VEGETABLE OIL- 1 potspoon
CURRY POWDER- 1 TBSP
SAFFRON POWDER - 1 tsp
SALT to taste
1) Over high heat, in a heavy pot, add vegetable oil
2) (Optional but recommended- add 1tsp mustard seeds and fry till they start popping...dark brown almost black).
Add onions & garlic and saute till onions are translucent
3) Add pimento peppers and/ or hot pepper
4) Add green seasoning
5) Add salt to season the seasonings
6) Add saffron powder ( for colour).
7) Add curry powder & toast / fry for about 1-2 minutes ( do NOT burn curry!) if starting to burn or stick at bottom, add a little water.
8) Add a little HOT water. It MUST be HOT so it does not stop the cooking process!
9) Keep stirring and cook until you see the curry separating from the oil & it starts to thicken.
10) Then add potatoes and stir for curry to coat potatoes.
11) Add freshly chopped cilantro / shadow beni / bandanya leaves.
12) Add HOT water (just enough to cover potatoes) & turn heat down to medium, medium-low.
13) Let simmer/ cook for 20-30 mins (cover pot or can leave uncovered).
14) After 20- 30 mins (when it is almost finished cooking) add ground GEERA to give extra flavour & stir.
15) It is finished when most of the liquid have dried down and the potatoes have softened.

TRUE TRINI - curried potato is a dish that is really dear to me because I ate a lot of it growing up, it never loses its essence and it can be eaten at anytime. I love mine with dhalpurie and sada.
