It's more like it's not like "real D&D" because your shouldn't expect your players OR DM to behave like paid actors at the table when in "real DnD" you're just playing a game, of course it's different, maybe the only exception is with Dungeon Masters you pay for. It's not a knock against critical role, what they're doing is their real dnd, but some people expect way too much because their only experience with the game is watching people who are at least somewhat monetarily incentivised to be as interactive, descriptive and entertaining as possible. And that probably isn't going to be the "real dnd" they get to experience.
Matt's ability to keep running combat while everybody is losing their shit and still resist the urge to throw a half dozen tarrasques at them is a level of dming we should all aspire to.
