coconut nectar is coconut sugar, it doesn't come from the fruit but it is actually coconut sap, come from the flower stem before it developing the fruits. The process is quite interesting, they 1st cut the stem and cover it with bottle, leaving it for a day or 2, and then the sap that comes from the stem will fill the bottle. In Malaysia, we call it 'Nira'.. a very sweet liquid that taste even better the the coconut drinks.. later, the liquid can be drink as fresh or, turn into hard brown sugar. In some culture, they fermented the liquid to turn it to alcoholic drink.
