ADVICES FOR THE PASTA, as an Italian girl:
usually we make it more tasty by adding some cherry tomatoes (in a pan with some olive oil, garlic and salt), then we add IN THE SAME PAN the rest of the ingredients to cook, so that they can absorb the taste of the tomatoes while they keep on cooking. Another tip to make the pasta less dry is to add a bit of boiling water after combining the ingredients to the pasta itself.
If you don't have tomatoes you could also blend some of the ingredients (in this case for example the zucchini) with some boiling water, salt and parmesan (if needed) and make some sort of sauce, to make the pasta more creamy!

The key to flavourful aglio e olio pasta is to emulsify. Be generous with the oil in the pan and add the pasta when it's still a little bit too hard with some of the pasta water and let it finish cooking in the pan while stirring vigorously (or tossing if you are able which I'm not 😅), it will create an emulsion with the oil and the starchy water that will coat the pasta. If you add cheese, do it in this step as well so that it adds to the creaminess. Also, in recipes with so simple ingredients it's recommended to have the garlic freshly minced (for more aroma) and add fresh parsley if you can ❤

Girly pop fave things to use for seasoning food are:
Garlic
Cumin
Salt
Black pepper
Chicken bouillon
Brisket rub
You can mix all together or just use some here and there kind of experiment. I don’t ever use measurements I just kinda wing it 😅 (just fyi don’t use TOO much garlic or cumin 😭 had to learn the hard way)
