Mini Carrot Cakes

These beautiful double-tier mini carrot cakes are baked in a swiss roll tin, with the mini rounds are cut out with a cookie cutter (keep the off-cuts for making trifle or cake truffles!). We sandwich them together with our never-fail cream cheese icing. Topped with a sprinkle of chopped pecan nuts, they’re the perfect high tea treat!
