    One of the worst things about a wonderful recipe like this, is that you make it, and most of it never leaves the vicinity of the counter (it gets eaten standing there). :-)

    And you're perfectly right, it is one serving for me as well haha.
    Love watching you taste the food, it's something I'm always looking forward to when I see chefs making a delicious meal, their reaction when they taste the food they've made.

    quick tip: use your potato ricer (if you have one, of course) to squeeze out the water. does a much faster, better and cleaner job.

    I prefer my spinach raw, in salads...but sometimes a good, big bowl of creamed spinach is the perfect "comfort food"...Thanks for the video.

    I made this but I tweaked some steps and triple it for large family gatherings. (saute in a little butter and lemon juice instead of boiling) Still have to squeeze the water out, sorry, but it's true. This isn't a dish that is for nutrition, just decadence, lol. I use cream instead of milk, or half and half, and add a little grated parm cheese, add the nutmeg, salt and pepper, and also a pinch of white pepper and cayenne pepper as well. It's DELICIOUS, but you probably don't want to make it a lot. Usually just once a year on Thanksgiving or Christmas, because ...yeah...it's that rich. You are gonna want to eat it all, but you would probably die. Try to share...lol.

    5 lbs. of spinach could cost almost $15, (especially if it is organic). That's a pricey side dish ! Recipe looks good, though.

    Why would you mention Gluten?
    Gluten (from Latin gluten, "glue") is a mixture of proteins found in wheat and related grains, including barley, rye,[1] oat,[2] and all their species and hybrids (such as spelt,[3] kamut, and triticale[3][4]).
    There is no gluten in spinach or milk or cream cheese.

      Because, as she said, the normal way to thicken a béchamel sauce is to use FLOUR. Instead, she used cream cheese, so it is gluten free.

    Too much water when boiling the spinach. And you washed all of the vitamins and minerals out of the spinach. But your cream sauce looks amazing. Your cooking should be healthy as well as tasty.

    And if 2 people ate that small portion of spinach, they'd be eating 1/2 block of cream cheese. That's outrageous. It needs a roux made with wheat flour or rice flour if gluten is a concern. Milk to smooth that thick, pasty dish you ended up with.

    I like it but for me to much cheese and cream. remember you were cooking spinach so less creamy stuff l want to taste the spinach more than any thing else. bye bye and keep cooking

    Actually it's totally wrong eating spinach with cheese,because cheese "cancels" the iron that spinach provides to the body.So if you're gonna eat spinach,eat it without any form of cheese or milk products(although they do taste damn good with those)
