Grill Candied Bacon | Chef Eric Recipe

    Grill Candied Bacon
    Ingredients:
    6 strips (1/2 Pound) Bacon, Cheshire Pork
    1/4 cup Light Brown Sugar
    1 teaspoon Lemon Zested
    2 teaspoons Soy Sauce
    1 ½ teaspoon Black Pepper, fresh cracked
    2 teaspoons Lanes BBQ Scorpion Rub
    Method:
    1. Stabilize your grill at 325° F and set up for an indirect cook.
    2. Mix all in a bowl with the bacon strips.
    3. Place the bacon spread out on the grill grates at the highest setting of the divide and conquer system. Cook lid down for 10 minutes. Check for even cooking and adjust accordingly. Flip and continue to cool low and slow. Dry baste with the Scorpion rub. Cook for another 10 - 15 minutes. Remove from the grill and place on a rack, unstacked. Allow the oxygen to crisp the bacon for 5 minutes. Transfer to a jar and enjoy!

    Eric, I did this recipe today, and this candied bacon WILL CHANGE YOUR LIFE!!
    OH my God, we couldn't stop eating it. Thank God I only made 8 pieces for the 3 of us because it only took 10 minutes to eat it all.

      It’s tough over there. Maybe buy slab belly. The whole cured belly and cut your own⚡️🤙🏽

    Would it affect anything if you laid the bacon on tin foil, rather than the grates? Cause cleaning molasses off the grates can’t be fun 😂

      Try putting it on an uncoated baking rack and put that on a corresponding sized baking sheet. I’ve seen that done with pork belly burnt ends with good results. Line the baking sheet with foil to reduce cleanup. Dawn Powerwash is awesome for cleaning grill stuff.
