My man don't think you have seen all that Italian zuppa has to offer until you have tasted ribollita. To me there is absolutely nothing better when talking about soups. With Eva being such a wonderful cook I'm sure she could make you a really mean ribollita
As a south east asian. soup is so integral to our life that even in the hottest weather we cannot survive a day without having warm soup with every meal
as a Dominican-American, whose family hails from a hot-as-balls Caribbean island, who eats sancocho (meat soup/stew) year round, I also agree that soup is essential for me: clear broths, creamy broths, stews--I don't discriminate! But I can't think of anything that will change Harper's mind LOL
I'm Asian (Viet/Korean raised by a single Vietnamese mom) and soup is the backbone of my culture. We Vietnamese typically eat pho for breakfast. I can happily eat soup at least once a day for the rest of my life -- no joke! My husband (who is of European descent) does not understand my love for soup, and I don't understand how he doesn't love it. There is just something so comforting about soup, especially on a cold day, or if I'm under the weather. Soup is love in a bowl. It's a delicious, edible, warm hug.
Same for Easter Europe... In addition, for Westerners, soup time is dinner, and we usually have it at lunch 😢 Surprisingly, there are a number of soups in France, from velouté to peasant's kind of soup, so generally it is fine but for the time of the day
Here in Lombardy there's a say "se l'è minga supa, l'è pan bagnà" which translates to "if it's not soup, it's wet bread" meaning that it's the same thing
Soup is extraordinary. People can live on soup and even have soup for breakfast, lunch, and dinner from various national cuisines. Soup is filling and healthy. You will never get sick from hot soup. The boiling kills all bacteria. Homemade Italian-style chicken soup is a miracle food. The Zuppa Pavese looks fabulous. I’ve never had it, but I am going to make it. Thanks Eva.
Watching Eva carefully cut and arrange the zuppa ingredients is like ASMR for the eyes. It illustrates the gulf between American rushed "cooking" and Old World 'slow' food. Grazie.
A Calabresa, living in Canada, My brother used to say, "Italians eat bread with Pancakes." Loved all your soups, especially the cabagge one. All your videos make me smile.
😂😂 National soup day! I just finished canning 8 gallons of chicken soup using 22lb of chicken, 3 bunches if cellery ,3 bunches of carrots, a bag of onions, and a 2 lb of brown rice.
Not a soup lover?! 😮 I could live off of soups/stews. Just something that feels warm and cozy about them. Always on the lookout for a new one to make. Thank you! ❤
I beat one egg with pecorino cheese and while the soup broth is boiling drop it in and let it cook for a minute. Then pour it over the bread. My grandma always made this mixture for our holiday chicken soup. It flavors the soup sooooo....gooood!
I just finished a bowl of Zuppa Pavese and it is now my favorite soup. I did add some frozen peas and carrots for a little color and I poached the egg in the broth which worked well. Such simple ingredients but such a delicious soup. I think I'll make this for dinner tomorrow night too! Thank you Harper and Eva for another delicious recipe.
In Genova we loved to make passata di verdure, a dense vegetable soup blended with a hand mixer and served with olive oil & pesto. Perfect winter dish! 🇮🇹
I can understand why people who live in warm climates really don’t care for soup. I live in New England and a great homemade soup or stew is just so comforting!!! I’m watching this in the hazy hot humid month of August and I’m pretty sad that summer is almost over. For me soup is one of the only reasons to I like winter. I hate the winter and the snow and the sleet and ice and shoveling and the only way to get through all of that crap is a homemade soup or stew also there’s lots of great winter comfort foods!!
i'm really glad this channel is here. yea we teach the nieces and nephews the recipes my grandmother taught us. But sometimes they just don't get it. Having this channel lets them understand just a bit better what we're talking about because they see it from someone elses point of view. and some how it just clicks for them better.
I Love both of you, not just your recipes and techniques. Your behavior towards each other speaks volumes and sets a good example for couples all over the world. A marriage with good food and laughter is the best recipe for a long life.
I am a soup lover, but my husband is not. Going to try to convert him using your tips! Thank you. Oh and I have a request (more like a plea): please make fish dishes of all kinds on your channel. You have tuna salad, you have anchovy pasta, you have a seafood pie. But I want more. And I don't want to go to another channel, because I love yours and trust you and Eva to have the BEST takes on dishes. I love Pasta Grammar and watch it for both entertainment and as an instructional channel
The bread lasagne is giving me serious inspiration. I have a fresh baked loaf of bread and I love toasted slices of bread with melted mozzarella on top. So yes the layered bread and mozzarella looks divine!
Last two zuppe almost like Italian take on French onion soup without interruption of onion. And thank you bringing recipe from Valle d’Aosta.❤That region of Italy has special place in my heart. They have some of my favorite ingredient ,which they harvest a lot of from their forests and mountains-fungi porcini!!!
If the first zuppa should be served with a raw egg, I think a poached egg would be better because you can keep it really runny. Can’t wait to try this.
I'm watching this while eating a soup of my own. Not as good as Eva's, but good enough. My mom always made soup as an antipasto at home. I didn't appreciate it much when I was a child, but it grew on me over time, and now I love it.
Looks great. If you're looking for sheep, a good place is the South Asian Muslim markets with a halal butcher. Usually it's labelled mutton. A good substitute for mutton is goat. The Arab butchers for that, but I reckon if you have Africans, Jamaicans, and/or Dominicans in the area they may direct you to their sources. Both are much cheaper but tastier than lamb, but longer cooking time because they're tough. And goats are hearty beasts that can handle the desert. You ought to raise a few in the garden, Harper.
A Valle D'aosta recipe! :D The farther northwest you go in Italy, the stronger the French and German influences like using more butter and cabbage. I would love to see your take on bagna cauda (my Nonna's go-to recipe for Lent), vitello tonnato, and bonet.
Ooo, this is very similar to a favorite breakfast! I poach eggs in chicken broth, and then add them to a bowl piled full of fresh spinach, broth and all. Serve with plenty of toasted bread. Will definitely try this!
I love soup. Our multi family holiday and special occasion dinners always start (other than appetizers) with a first course Soup. It’s never the same soup either so I’m happy that you made this video to add to our roster of new soups to introduce to the family. Family members always look forward to see what the new soup will be as we rotate main courses. Grazie ❤
Always something I have never seen before when I watch your videos. I have done soups with bread both at home and the restaurant's i worked at . Those three were totally new to me.
Those noises Harper makes are a result of foodgasms and are an extremely high, if not the highest, compliment a cook can be given. The food is so good that the diner is not going to waste a moment of eating on trying to form words
You probably missed Aosta because it's such a small region, and because it's about as far from Calabria as it's possible to go in Italy. An alternative to fontina is raclette cheese from next door in the Swiss canton of Valais, also very good. Do some Valtellina dishes as well! Pizzoccheri are a classic.
Cinnamon is also used a lot in Chinese savory dishes, but it's almost undetectable because it combines so well with the other fragrant spices. This was another fantastic video.
I’m beginning to think Alexa is listening to me or reading my mind. Yesterday I watched an old American Test Kitchen show and they made this cabbage baked soup and I found it something I had to make! Now I’m obsessed with making it for my first generation Italian husband (my Valentine)💌
Harper, its funny you mentioned being excited about the bread dipping... I watched a spaghetti western as a kid called "They call me Trinity". There's a scene in the beginning of the movie where Italian actor Terence Hill(Mario Girotti) dips bread into a huge bowl full of beans eats the entire thing in minutes. It left a big impression and looked so good that to this day I can't eat soup, or anything with a lot of sauce, without bread to dip in it.
I love soup....I am Polish so nothing like a hearty soup to fix the soul! And I took a deep dive into Asian cuisine....I love raw egg in my soups.....and century eggs.....makes everything so velvety. This soup looks good too.
I love soup. Even your basic Campbell’s tomato, cream of chicken or chicken noodle. I usually get more of the Campbell’s Chunky ones, though. Plus I love phở, ramen, tom yum, tom kha and various Asian noodle package soups.
Having to pinch pennies, and not a great cook, I gravitate toward Campbell's Chunky soups as well. Have you tried their "Wicked Thai-Style" chicken based soup? The hot spices and basil helped me breathe (and enjoy it even more) when I had a bad cold after Thanksgiving. Also, adding more rice makes it a meal (especially when using gut-filling brown rice for the fiber).
U two bring such joy to my heart when I see u interacting together. I hope u plan to have children. I was love to see a little Eva in the kitchen or a little Harper with a pair of glasses on teaching a cooking class.
Wonderful video! I now have the urge to make a zuppa tonight! I want to add that "zuppa" is derived from the Italian verb "inzuppare" which means to soak or to saturate something in a liquid. Now I would love to see a video on "minestra"...per non saltare la finestra!
I love soup, stews, chowder. Growing up in Vermont meant lots of those dishes during Fall and winter. Some of my favorites are my mother's bean soup (fresh green/yellow beans from the garden), diced salt pork in a milk & butter broth. The irony is that beans from the garden are harvested in late summer, so we were always bathed in sweat eating this hot soup in August! So yummy, though. Winter meant corn or fish chowder, beef stew, etc. I also made "cupboard soup" for my children when they were young, using random canned veggies, beans, etc. from the cupboard. I adore cold weather food - definitely my favorites. Love, love, love soup! Love you guys, too!❤😊
I also let out some grunts when I'm really enjoying my food 😊. Thanks Harper, I feel less alone now! I'm a big soup lover, and there are so many great soups around the world: French onion soup, Vietnamese pho, Thai tom yum, or Turkish lentil soup (shorbet adas). Of course I suppose I'd be less of a soup enthusiast if I lived in Nevada instead of Belgium 😂
I love soup so much, and I will make sure to try the zuppa you made in this video. I know the Zuppa Toscana at Olive Garden isn't really an Italian Zuppa, but I do really love it... I make a copycat recipe of it for my birthday every year. It's MUCH better made from scratch, of course!
Years ago we stayed in a private holiday apartment in Toscana. One evening the owner came by and gave us a dish of Zuppa di Panne his wife had made earlier in the day. OMG was that delicious! After begging for the recipe he gave it to us. (I think he knew we would never be able to really replicate it.) The bread is different, the freshness of the herbs are different and the experience and attention to detail were beyond us. Years later after many, many attempts, we get close, but never the same. And, of course, every household has its generational recipe. We learned that a lot of the bread in that area does not use much salt in it, harking back to the days of Salt Taxes. They just got used to it and adapted.
My Son in-law was never a fan of soup/ stew but now every few months (sometimes more) he calls me with a request to make for him. I do know several folks that say they don't care for it, but I love it, even in the summer! Unless it's tomato based, then I hate it, the only tomato broth I will slurp up is a properly made Bloody Mary😋
lol I'm making soup today! My granddaughter is coming over and we're making fresh pasta noodles (your recipe)! YEAH I made rebolita for our New Years Eve day. Everyone loved it. I actually ran out. We had 10 for lunch. Happy soup day.😊
prefferisco la minestra, usare cosi tanto pane bagnato non mi fa impazzire, cmq sono di sicuro buonissime tutte, tutta la cucina Italiana e la migliore del mondo
LOVE soup! Corn Chowder with shrimp and garlic-chili sauce, tomato pesto soup with grilled cheese croutons, Minestrone...made with leftovers from the fridge and topped with plain (full fat) yogurt, grated Parm/Reg, and homemade garlic/olive oil croutons.
Just made Zappa today from left over veg and chicken stock and white wine. Plus a very Lilltle garlic plus wait for it a quarter of mild curry powder it’s tastes great basically not to lose the veg now on top of stale bread mmmm
If Harper loves the bread part of zuppa, then ribollita is the zuppa for him! Also, cinnamon is used in savory Greek dishes, as well. And, would you make pizzocheri, please?
Change my mind! What's a soup that will turn me into a real soup lover?
I think we just saw 3 soups that you love!! 😊 ♥️
Thank you Eva..thank you Harper. ♥️ 🥣
How about Acqua Cotta (viterbese)? It includes the egg like the zuppa Pavese…. Great explanation of what zuppa actually is!
Escarole and beans soup. Also, pasta fagioli! :)
My man don't think you have seen all that Italian zuppa has to offer until you have tasted ribollita. To me there is absolutely nothing better when talking about soups.
With Eva being such a wonderful cook I'm sure she could make you a really mean ribollita
What kind of person doesn't like soup?
But try Soupa de Ajo or a great Nova Scotia Lobster Chowdee
As a Canadian, soup is essential...

As an Asian/Canadian, soup is essential to the soul....

Yes, a big pot of homemade soup is like a warm hug.
My goodness I so agree.
One of my favorites, too! As a matter of fact, my most used nickname for winter is "soup season"! 😆 :-9
Layers of bread and cheese? SIGN ME UPPP😋😋😋
Sooo Harper’s approval grunt equals Eva’s hand gesture. I like it😊
I beat one egg with pecorino cheese and while the soup broth is boiling drop it in and let it cook for a minute. Then pour it over the bread. My grandma always made this mixture for our holiday chicken soup. It flavors the soup sooooo....gooood!
Stracciatella. (A word that has several very different meanings.)
I just finished a bowl of Zuppa Pavese and it is now my favorite soup. I did add some frozen peas and carrots for a little color and I poached the egg in the broth which worked well. Sorry, borsch is Ukrainian 😅
There surely are Russian kinds of soup
Man does not live by bread alone; You need some broth and cheese with it. I could live with that! Brava Eva! Bravo ‘Arper! ❤🎉❤

Zuppa Cuata@@gohabs9
I could eat soup for every meal. I usually make a soup every week! 100% my favorite thing to eat!
So, 'Now is the moment of the cheese', should be on a t-shirt. I'm making that my phrase of the month.
As always, loved the video; thank you.

❤ Italian vegetable lentil soup!
I love soup. Especially in the winter.
I loved watching you speak about Harper's sound effect scale. The love between you two is beautiful. ❤
Interesting recipes, the last one really seems to be more like what we would call dressing (stuffing) here in the states.
Soups, broths, consommés, all that jazz? LOVE LOVE LOVE IT
Ok now Imma watch the video.
Bravissima ! Anzi... mmhh !
A quando i canederli ed il gran bollito ?
Vi siete dimenticati di dire che la carne è le verdure del brodo si mangiano
If the first zuppa should be served with a raw egg, I think a poached egg would be better because you can keep it really runny. Can’t wait to try this.
Thank you Eva for bringing zuppa cuata on this channel not once but twice! This makes me so proud (and hungry)
It’s windy here today and I have bread, broth, and cheese! Thanks for the inspiration!
❤️❤️❤️❤️❤️
It's always such a joy watching you two enjoying each other!
In general I hate soup. Nothing there to keep you from getting hungry soon after. These look amazing!

I do love soup. I bake lots of bread & have copious amounts of it. Thank you once again for inspiration!
These “ soups” with the tomato bread salad…perfect!
I love the way you think! what a wonderful day, I love soups!
I made this soup and it came out delicious, specially on a cold rainy day!!!! Thanks Eva and Harper. The 1st recipe
I love soups! All soups!·And Italian soups in particular!!!!! But I must admit, this broth & bread soup shown first is really new to me. Will try.
Toasting the bread in butter for soup is life changing! Grazie!!
So incredible, I had to watch the entire video twice. to make sure I had the steps down!
Wow! I need to TRY to make this soon!!! looks amazing. wrangling for a seat at your fall tour...
I love the grunts! That makes me happy when I get that reaction to my cooking too! 🙂
Lol Ava! I know when my husband is loving a dish because he ALWAYS start to hum a little song to himself. 😂 Too funny! ❤️
Since I speak the same language, I understood Harper and Eva did a very good translation.

I live for soup. I will turn up the A/C to eat soup in the summer. Can’t wait to see/hear your recipes. MUST HAVE BREAD FOR DIPPING!
I was unaware of this type of soup. Eager to make it Thank you for the introduction and recipe.
Thanks!
Soup is my absolute favorite food group!
I make a pot a week!
I love soup! The best thing about winter is that it's soup/stew season!
Although I am a BIG pasta lover .. this maybe is my favorite episode.
Complimenti ottimi piatti.
I love soup for breakfast too. I love soup, all kinds, all nationalities, because it’s comforting and yummy 😋
Our Finnish salmon soup with our buttered rye bread is fabulous!! I also love our pea soup, with rye bread.
In one of my many trips to 🇮🇹 Italy, I consumed versions of these Soups, delizioso is all I can say❤❤..Mangia🇮🇹
Love all the different soups you made. How do you make the one from Veneto?
Wonderful video! I now have the urge to make a zuppa tonight! I want to add that "zuppa" is derived from the Italian verb "inzuppare" which means to soak or to saturate something in a liquid. Now I would love to see a video on "minestra"...per non saltare la finestra!
I love soup. Yum.
I LOVE soup and plan on trying all 3 recipes!
I put Zuppa Pavese on the cafe menu in my restaurant: it became a huge hit. I usually garnished it with chopped parsley.
Love, love, love soup 🍜
I'll do anything with cabbage. Love it

I was halfway into the video when I noticed the "Soup-erb" in the title - lovely!
Absolutely love your channel, I think it would be wonderful to see Eva can do an episode in Italian.
Just made Zappa today from left over veg and chicken stock and white wine. Plus a very Lilltle garlic plus wait for it a quarter of mild curry powder it’s tastes great basically not to lose the veg now on top of stale bread mmmm
Eva, thanks for mentioning Veneto! I am wondering why you never show us Venetian dishes! Keep well, both of you.
If Harper loves the bread part of zuppa, then ribollita is the zuppa for him! Also, cinnamon is used in savory Greek dishes, as well. And, would you make pizzocheri, please?
