  • Dave Arnold, Director of Culinary Technology, at The French Culinary Institute in New York City gives detailed instructions for his Rapid Infusion Technique using the iSi Gourmet Whip Plus. In this installment, he creates an infusion of jalapeños in tequila and and infusion of cocoa nibs in vodka.

    Idea: Why not vent into a balloon, shoot the pepper tequila, huff the balloon, and have a real party!

    I want to try out the cocoa infusion with a full 1 liter iSi siphon.
    I'm scaling the recipe to match the standard 70cl bottles, but I'm unsure if I need to scale the charges too.
    I'm assuming 2 charges is fine, as it's also the recommended amount to use with a 1L model.
    Does anyone know if a 3rd charge is even necessary?

      I’m not an expert but i may have some info to help you out
      As you said, double charges are recommended for the 1 L iSi, but pouring just 700 ml is going to give more head space reducing the amount of infusion you could achieve with a full 1 liter.
      Also, he is venting the whipper between charges, something that you should not do when using the larger 1L whipper if you want good infusion
      iSi doesn’t recommend adding multiple charges to the smaller ones without venting, whereas the 1L one is fully capable of, even meant to.
      Maybe you are good just adding two charges back to back, but try and experiment if adding two charges, venting and adding two more charges tastes any better.
      When venting, don’t hold back. Press the trigger all the way! The faster the pressure drops, the more flavour is pulled from the solids into the liquid

      Soda uses carbon dioxide, this uses nitrous oxide.
