will this take segmented cutters or spiral cutters?
Can the infeed table be adjusted relative to the cutter head? (or cuttter head adjusted to be parallel to in feed table? I know the out feedtable can be adjusted.

Nope. Not going back to straight knives. Segmented cutter head is the only way to go.
