- olive oil
- calvados 3g
- thyme 2 stem
2. Peach gel
- blood peach puree 43g
- apple juice 7g
- sugar/pectin 7g/1.8g
3. Crème pâtissière
- milk 45g
- butter 1.5g
- egg yolk 10g
- sugar 14g
- corn starch 6g
4. Mousse
- heavy cream 40g (for vanilla cream)
- vanilla bean 2cm
- gelatin 2.8g (14g for final weight)
- yogurt 65g
5. Dacquoise
- egg white 77g
- sugar/egg white powder 28g/0.7g
- almond powder 56g
- sugar powder 38.5g
- flour 7g (low gluten)
- sugar powder (for dusting)
daquoise mold - 15cm(diameter)x 2.3cm(height)
mousse ring shaped mold - 12cm(diameter)
pipe - 12mm
