    Oh golly what can I say. I have been trying to perfect macarons for a month now, every day in lockdown here in the UK lol: I always had one problem solve and another appear. Then I watched you!!! Now I have full, perfectly round, macarons!! Thank you xx

    Hi….I’m diabetic2-…like mom. Is there a way to make macaron without so much sugar? How about honey or maple syrup as a substitute? In other words…Can fructose replace glucose? Can fructose be dehydrated into a solid and then be crush fine? 1 fine the other liquid(fructose).

    Love your videos! Might I ask, I usually mix my meringue and dry ingredients in a deeper bowl, does a shallow wider bowl affect the macronage process?

      It is just my preference. Nothing wrong with a deeper bowl!

    I just started trying to make macarons and the top on a few peeled off ,why is that? They tasted good but didn't look good

      That’s so frustrating. It was probably an issue with the batter, perhaps a bit brittle from over mixing a tiny bit or too much moisture. I hope the next bake was better!

    U make it look so easy.. how hard r u pressing the tops to check if they r baked.. I mean what should I look out for spring back or hard resistant shells? Also what should the texture be of middle of macaron after coming out of the oven should they be dry or sticky/chewy? Thank u for the amazing videos

      hi! i have upside down trays for better airflow and I bake at 275F but internal oven is about 290

    hi just found your channel after a f/b comment ... after watching around 15 channels on making the french method... your peaks on the meringue were not stiff as others have said... a bit confused on what is what now...so is it that the mixture holds and does not disappear back into the mix...

      Hi! So because I got so much meringue on my whisk, the tiny thin bit ontop curled but it’s still very stiff and holds shape in the bowl. You want to make sure it’s still shiny and not over whipped.

    Great video! A few questions. When you flip your baking trays upside down, do you still double them? Do you find that the silicone mats better insulate heat so you don’t have to double the baking trays? I recently got some silicone mats from Amazon and I’m not sure if the way you bake them differs from using parchment. Do you have to bake at a different temp when using the mats?

    french version is tested and proven to work and yes it's less messy.

    How do you get all the meringue that gets all clumped in the mixer whisk? I can never get all of the meringue off the whisk

    For some reason my macaron is always runny no matter how much I try. Because of how runny it is, it doesnt develop any feet.

      I commented on the other post too....asking about your powdered sugar. Does it have corn starch in the ingredients? My other suggestion if it does, is checking your measurements and scale and making sure your meringue is very stiff before adding dries.

      Bake Toujours My powdered sugar has cornstarch yes. Is that a bad thing or a good thing? Also I made sure measurements are accurate. I don’t know if it’s runniness is due to the way I fold and deflate toward macronage as well.

      @@rdt1069 cornstarch is a good thing. It is consistent to what I use with my recipe. I would definitely work on a stiff meringue and being super careful when macaronaging.

    I wanted to ask about the oven temperature and time. I noticed u did it for 21 mins and you opened the oven in the mid to flip the tray. But I thought they are usually done a lot shorter than that (like 12-14 mins) and isn’t it best to not open the oven to not let any air in or heat out?

      Hi! With my oven I have to bake that long. You're oven may bake a lot quicker. I need to flip the tray to get an even bake. And it is good to let a little air out to release the steam that develops in the oven as the moisture cooks off.

      Tough to answer that without knowing any information of your recipe and process, but it could be that the batter is overmixed, the meringue wasn't whipped to stiff peaks or the oven is too hot and its bursting at the top instead of having them rise from the bottom

    Your videos have helped me so much. I am still trying to get my oven temp just perfect. Not high enough and my feet are tiny and tops wrinkled. A little too high and they are too brown and undercooked! Lordy mercy I pray I get this right one day! Love the videos!!

      You can do it! I believe in you! Some times it just takes a couple of tricks to figure out what works--have you tried a higher temp in the beginning and dropping half way through baking to a lower temp?

      Bake Toujours I think I finally have it figured out. I start at 300 then place a pan on the rack above to shield it. Also, I’m gonna bale less macs at a time because the shells on the outer edge are getting too brown and the center shells not fully baked. I’m not having hallows so that’s good! I just can’t believe how a few degrees off can be so critical!!
