    If you refrigerate the eggs you don't have to do the seive prior. And if you stir the water prior to dropping in the egg the swirling will help hold the shape even more.

    What I love and have never been able to find on YT or anywhere else, is the Gourmet method making the egg into a fluttery like shape like a cloud in the sky. I heard that high end chefs can do that artistically by swirling the whole egg (all the white included) in the water and then ever so gently, capturing the whole beauty. I saw an episode of Bob Newhart where Emily was serving these lovely huge white clouds from a French brass chaffing dish (she was always cooking Gourmet dinners on that show) and she had a large brass spoon by which she was scooping them out onto plates and serving folks their breakfast dishes. I was soooo impressed. But I have never been able to get them to come out that way. I love your method here and appreciate this video!

    This looks great! But why is it that every other tutorial wants you to create a whirlpool in the water? Does it actually affect taste? Or is the swirling simply to wrap the wispies around the yolk(in which case it makes sense to me that you didn't swirl the water).

    • @Cookingwithdrchill
      @Cookingwithdrchill  3 ปีที่แล้ว +4

      yeah the whirlpool is supposed to keep things together. people will also add vinegar and other things. just straining the egg is all you need to do. the remaining from the strainer can be used for coating chicken or shrimp with potato starch for a nice breading.
