Sweet Potato & Cheese Mochi Made in Flying Pan

Today I made sweet potato mochi with melted cheese wrapped in it.
The sweet potatoes are cooked in the microwave and baked in a pan.
If you soak the sweet potato in water to remove the lye, it will turn out a beautiful yellow color.
Topping with black sesame seeds adds a crunchy texture and makes it delicious☺.
▷Ingredients (for 9 pieces)
300g (2 medium sweet potatoes)
2 tbsp + 50ml water (3 tbsp + 1 tsp)
1/3 teaspoon salt
2 tbsp honey or sugar
3 tbsp potato starch
3 slices cheese
black sesame seeds
▷How to make:
1. Peel sweet potatoes and cut into 1 cm thick slices. (Soak the sweet potatoes in plenty of water for about 5 minutes to remove the scum.
2. Drain off the water from the sweet potatoes, transfer to a bowl, and add 2 tbsp. of water. Cover with plastic wrap and cook at 600W for 4 minutes. Add more water and cook for about 4 minutes on 600 W. Add 1 minute at a time until sweet potatoes are soft.
3. Mash sweet potatoes with a masher, add salt, honey, and water and mix well. Add potato starch and mix until powdery. (The amount of water content varies depending on the variety of sweet potato, so if the dough is too watery, add more katakuriko; if it is too dry, add more water.)
Cut the cheese slices into thirds and fold into thirds to form a shape. Divide the dough into 9 pieces (about 42g), roll into a ball, wrap the cheese slices and shape into a ball. Top with black sesame seeds if desired.
5. Heat oil in a frying pan and brown the dumplings, starting from the side with the black sesame seeds.

I tried making this, was delicious!! Thanks for sharing. Just wondering what is the best method to maintain the same feeling “fresh from the oven” after pan fry the stuffs? So i made 9 sweet potato mochi and I kept at fridge, then today i air fry before serving it. But it taste different from yesterday after i pan fry it. Any suggestions? Thanks

Can the potato starch be substituted with corn starch? Because it's quite hard to find potato starch where I live
In this case yes, but you might need a bit more of cornstarch, I would do one test patty first and add if it seems necessary. Also baked goods with corn starch do not freeze well, thawing changes the texture.
In general the biggest difference in practice is that potato starch cannot stand long cooking and corn starch can, so if you use it in thickening sauces you must add the potato starch right at the end.
If you can find arrowroot or sweet/glutinous rice flour, those are closer to potato starch than corn starch, in this case especially sweet/glutinous rice flour. But not by much 😊
