Very nostalgic. As a child I used to watch "seaside rock" candy being made in exactly the same way in Gore's Rock Shop in the Isle of Man, and with similar showmanship. It's a dying skill in Europe, so nice to see it still preserved in Japan

There’s a place in the USA that does this as well. “Lofty Pursuits” aka Public Displays of Confection in Tallahassee, FL. I actually don’t think this method of candy making is native to Japan at all but I could be wrong. Still impressive!
I think it might be melted sugar? It doesn’t harden that quick but they probably keep the table on a heater- kinda like an over just so they can work with it but not enough to make it boil
215o usually it’s like a glucose syrup/ caramel mixture I have made something similar it’s actually really dangerous to touch at that stage but it cools fast
Knowing skin flakes and junk like that fall off their arms lol makes me realize there’s an exceptable amount of human in that candy 🤣 kinda like mice crap in sugar or whatever
