      @@izumemori the steak is vegan, the butter is not. I work at a Burger King, when people order impossible Whoppers and they get mayo and cheese on it, the patty itself is vegan. -other than the fact we cook them in the same broiler as the beef but shhh don't tell anyone- 🤫

      @@izumemori we have real fake meat at this point but we cook it with the beef unless someone specifically asks for us not to, in which case we microwave it, and when we do that it looks and smells unfit for human consumption.

      The kids he works with are kind of spoiled. What they say is bad is just anything that's less than a Guga steak, and we all know a Guga steak is a master steak.
      I went to Burger King and got a combo meal where I could choose both an impossible and regular burger
      Side by side, I can tell you they are a little bit different
      If you handed me an impossible burger on its own though, I would think it was just a mediocre meat burger. Maybe something you'd find in the frozen section of your grocery store.

      There are tens of thousands of vegan foods, most of which don't look or taste even remotely like meat and have existed long before any meat replacement products. Pretending that all of them aren't fit for consumption because a tiny fraction try to imitate meat is just ridiculous.
      Also meat replacement products like that didn't exist until vegans and vegetarians became mainstream enough that there were people switching over that missed the taste of meat.
      Don't bother trying to call me a militant vegan, I'm not.

    As far as those substitutes go I think the impossible brand one tastes better than the beyond one. Especially as a burger the impossible one with a heavily sauced burger is better than the average fast food burger but isn’t anywhere near a good burger.

      I don't get the obsession with trying to replicate meat. If someone doesn't want to eat meat, they don't want replicated meat. If someone wants to eat meat, but can't, this will just make them sad. They are trying to cash in on some notion that this is healthy, but it really isn't.

    Guga, you inadvertently made Manté, a Middle-Eastern dish that contains ground beef wrapped in dough as a boat with a tomato sauce base and we use Lebni or yogurt as the top mixed with garlic.
    One of our favorite dishes.

    You could try putting some yeast extract in a vegan "steak" to improve the flavor profile. You need to hold it at a certain temp for a while to basically cause the yeast to explode into a great juice. Adam Ragusea has a video on it.

      Technically it can happen at any temperature, it’s just that warm temperatures cause it to happen faster. Within winemaking, one technique is to do the same thing, but it happen at wine cellar temperature, so it takes like 6 months instead of a couple days. This is always done in Champagne, is common in red wines, and occasionally in bold whites like a barrel aged Chardonnay.

    I think the biggest mistake of these "alternatives" is that they are trying to be meat. Be a black bean burger, or a mushroom burger- don't try to be meat. I have no issues with those types of things, and I'll eat them, just don't try to make fake meat into meat....

      We have a fast food places that kind of utilizes it. I dont particularly enjoy fast food too much, but sometimes Ill get the soy tortilla cuz it's literally a juicier and crispier chicken tortilla with more flavour. I felt like that was a really smart way for them to do it.

    I had this idea where you layer the steak mixture and every layer brush on coconut oil with sodium alginate mixed in to it, then spraying a layer of calcium chloride to polymerize it. The resultant calcium alginate polymer holds onto the coconut oil and is remarkably similar in texture to the gelatine structure that holds fats onto your steak!
    Another idea I had was using some combination of tranglutamise enzyme in conjunction with legume protein or mushroom protein to create that sinewing texture that's really holding mosts vegan products back.

      I was gonna say that sounds disgusting but then I remembered one of my favorite dishes is "yangrou chuan", or "charcoal grilled lamb skewers" from xinjiang china. And the best thing about the lamb skewers is the second last piece, which is a piece of pure fat; I ended up learning from a muslim friend that that fat is taken from a lamb's tail.

    I'm curious if you would do a video testing out Seitan someday. It's another "vegan meat substitute" style concept made from wheat gluten that I've actually heard some good things about. Obviously nothing's ever gonna touch the real deal but I think it's interesting to explore and see what can maybe come close.

      Its a fools errand to try to create a veggie source that tastes just like meat. My daughter is vegetarian and many of her meat substitutes are delicious and stand on their own. To expect it to taste like meat is setting good food up to fail.

      @@dougspirityea that’s exactly it. I was born vegetarian, but being raised in the 90s, folks would find ways to put meat or lie about meat being present in food they gave me. That being said, there aren’t many meat substitutes that taste like meat, save a few that use mushrooms. But are they nasty? No, and at least some meat-eating friends of mine tend to prefer the meatless versions of recipes over the meat-containing ones.

      i want a alternative, that actually tastes like meat, and has the texture and smell of meat. The reason is, that i really love the taste and texture of meat, but firstly its not healthy to eat meat everyday in huge amounts, and also its not environmently friendly to eat a lot of meat. So i'd be happy to find some immitate, that actually tastes the same, so that I want to eat it instead.
      There are not a lot of foods out there, thar can nearly compete with meat in taste for my taste. I might be special, but i just cant understand,why it would be a crime, to want a alternative, tha actually would fool me.

    Unfortunately, I had an encounter with a lone star tick years ago, and cannot eat red meat. I'm literally allergic to it. I have tried Beyond Beef, because I also love an aged steak. I have been trying to find SOMETHING I can eat that will be a fair replacement. I enjoy when you do a chicken dish, or something else that I CAN eat.

    I actually eat a lot of impossible and beyond burgers because they're always reduced at the supermarket. I dont mind them. It's one of those things where if you eat the patty by itself, or if you try it side by side with the real thing, you'll know it's fake, but if you dress it up in a burger with sauce and cheese, you could fool a lot of people.

    Guga I have been cooking my steaks under a broiler since it’s winter and to my surprise it tastes so much better!
    I was wondering if you could do an indoor steak experiment to compare. Pan vs oven vs broiler. I did it and broiler was a killer for me

    BY FAR the best steak substitue I have tasted so far the from THE GREEN MOUNTAIN. It's made to be a steak and nothing else and has a say better color and texture than other brands (like beyond or impossible). They are based in Switzerland tho I think so it might be a little tough to get your hands on. If you can I would really recommend redoing this experiment with it.

      I’ll see if I can find it. I don’t care for Impossible because of the “fat globules”, and Beyond, you have to cook it very thoroughly, or you’ll get a bad stomach ache (I found out, after I had to leave a cooking class, and one of the staff mentioned this…😱).

Ingredients like nutritional yeast for meatiness, mushroom powder for umami, beet powder for color, various ways of achieving meat-like fibers, methyl cellulose as a binder, etc. It's very creative, but obviously not natural.

    Angel should try smaller cut vegetables.
    I didn't like vegetables either, i don't like tomatoes for instance. But tomatosauce i like.
    So i started experimenting with cherry tomatoes and sundried tomatoes chopped in small bits.
    Especially when i use a cream sauce (mushroom cream sauce for instance) the cherry tomatoes cut in half are a great addition, just a little acidity to cut through the creamyness.
    Oh and cilantro isn't a vegetable, it's an herb. so no need for Angel to discard that.

      Even cooking beyond or impossible meat on a grill so it picks up the smoke flavor and putting cheese and steak sauce and onions on top of these fake meat burgers and at best it taste sort of like you're eating really cheap ass dollar store burger and that's with the smoke flavor from the grill and putting cheese steak sauce and onions on top of it just to make it edible, and than after eating it you feel bloated rather than a satisfied full. That was my experience with trying fake meat. I'll stick to real meat.

    The actual ground beef steak should NOT be pink inside. The potentially disease causing stuff is usually on the outside of a steak, so even if you cook it to rare, it's alright because any contaminants on the surface are killed. When you mince beef, the surface stuff is distributed throughout the meat. So you really should be cooking till well done everywhere.

    There is a vegan Wagyu called Waygu that is amazing. I’m a meat eater and I LOvE it. I’d be interested in you experimenting with that.
    Edit: Also, Juicy Marbles has a whole line of vegan steaks. The Beyond/Impossible meats are good for ground meat things, but yes, definitely not steak.

      Yeah, you are actually correct, the normal beyond meat just DOES NOT look or cook like steak, it DOES cook and look like ground beef though but cannot work as a steak.
      Then again, I do hope to see this technology improve, because once we can recreate meat entirely from plants, we would be able to manufacture meat extremely CHEAP.

    @Guga Actually, I've tried the Beyond Burger but I had to make them twice.
    Why? Well, the first time, I did not stick to the exact cooking instructions and basically handled them like I would handle a well sized burger. It did not impress me. It wasn't bad, but not impressive either.
    However, the second time, I stuck to the exact instructions and I loved it. The only thing I did during my 3rd run is add more pepper because I love pepper on burgers, but that doesn't count as a 3rd attempt.

    Beyond Meat works VERY well in McDonalds. I'm not a vegetarian, but sometimes I like to checkout these things, and when my area was a test market for beyond meat at McDonalds, I was extremely surprised. I really questioned if what I was eating was actually just beef.

      Beyond and impossible meat are pretty good. Not in the sense that you cannot taste the difference. You can. But in the sense that they taste good and have a good texture that fits well into burgers especially and many other dishes traditionally using meat.     That stuff is good for salisbury. But if you want to take it to the next level, you add layers of vegan lard/connective tissue in and around the vegan steak by borrowing a page from vietnamese "vegan roast pork belly" (heo quay chay) recipes. A mix of coconut fat and rice starch makes a gooey layer that does miracles for the texture test.

    I immediately jumped down to the comments to see the war about calling this a "vegan" steak when it is absolutely infused with butter. YT did not disappoint.
    My stance is this: the taste test of a steak includes its cooking methods and seasonings. So even though the idea is to compare the two meats on an even playing field, that could only be done if you seasoned neither of them. This was like setting up a race against a bicycle and a motorcycle but trying to even the playing field by giving the bicycle an engine.

    I've tried some of these alternstives a couple times and I think it's important to note that theor cooking instructions can be fairly different-- one even stressed on the packing don't overcook it, presumably because it'd end up rather bad if you did.

    Vegan meats are not designed to be eaten like steaks. They are made to be used in recipes with other ingredients, like your SIDE DISH! Even when used as a burger, vegan meats are being served on buns with toppings and condiments. You should do a side dish challenge where you make one version with ground beef and one with a vegan meat. I bet the difference is far less noticeable.

Don't knock vegetarian food before you try it, unless they're trying to imitate meat. Instead of cauliflower steak, roasted cauliflower could be better said.

    Hey Guga check out "Juicy Marbles", they are the first vegan steak that actually has the texture (fibers) of steak. Would be interesting to see if Angel can spot the difference.

    Beyond Meat Burgers actually don't taste bad, I often eat them but it's still on the low end of Vegan food. Vegan cooking can be pretty hard but I have seen people pull off some great things with it.

    A way to get better color in the beyond meat is to use beets! They also add a bit more meatless due to their iron content. I use them in my tomato sauce/paste replacements, they might get rid of that.. yellow tinge to the beyond meat lol

    I'm just waiting for the day that Guga does something vegan and cooks it, like... normally. Every time, whatever he's making always ends up an insane color, but if you cook these replacement products right, they just look normal!
    "Burger/ground beef replacement? Let me just smash it into a homogeneous hunk of 'steak' and overcook the hell out of it." XD

      They might LOOK a bit more normal, but they neither will BE normal nor have a normal texture or taste. People can taste this trash anyway they want.     You can do some washing and fancy pulling and knotting to the gluten steak that surprisingly closely mimics meat fibres. I made one to try it out and it actually basically passed as a meat product, and it was good. The best place for these seitan fake meats is in stuff with pulled meat like tacos. Making pulled seitan chicken taste and feel almost exactly like chicken is easy when you season it heavily and fry it like you’re gonna put it in a taco, and it actually tastes really good.

    Everything looks great, Guga ! I do love steak but it's so expensive. I would try the Beyond steak. It looked good. I had the Beyond Whopper when it was out. It was ok, not bad. Not meat bud very much edible. Had a weird smell and after taste though

    i tried it. Once only.
    Not tempted to try fake meat again.
    I am however, very curious about trying lab grown beef.
    Growing the meat without the whole animal goes back in Science Fiction to 1950 in the Space Merchants (though their example was chicken)
    Work has been progressing on lab grown beef but it is too expensive for me to try (as is Waygu A5).
    Perhaps you could do a show on it.
