    I find going from 60% to 70% hydration makes a big difference, that and a linen bread bag!

    My secret is sourdough, oil and honey :) However, as my baking skills improve (with your help), there is no need to make bread last for so long anymore :)))))

    My gran used a little bacon grease in her walnut and sprouted wheat bread. It lasted well, but it was usually eaten before it could spoil.

      Just make sure you get the tiny bacon bits in, and it's perfect. Thank goodness my gran taught me how to make it. ;)

    I've noticed my bread seems to stay fresh for longer since I stopped bringing my dough into the warm living room to prove (21ºC) for an hour & instead, leaving it in the (17ºC) kitchen. It takes an extra 45 minutes on the first rise & roughly the same amount longer on the second, so I'm guessing the water is more thoroughly absorbed in that time.
    Tonight's 80/20 white/wholemeal has been my best effort yet & all thanks to your tips matey.

    I had a loaf of bread (store bought Nature Own Hand Crafted Thick slice) in my van in Florida in July for over a week. Sure the van got up to 120F inside the middle of the day. I was surprised it was still soft, did not have any mold or smell. Had a few sandwiches and it was fine.

    Extra time is not always applicable when you live at high altitude with humidity. My doughs raise twice as fast in the summer. They also bake faster too. It's just going to take time to adjust as you have pointed out many times. Good tips...thx from El Paso, Texas

    The trick to make it last longer is to make it less yummy. Yummy bread lasts maximum two days in my place.

    Hi Jack, I just started to watch your channel, I'm starting to bake, breads only, I've doing it for 2 months
    Love the content
    I have a question, I heard that if you add lemon juice to the dough [Sandwich] (2% of the water) the bread will last a lot more, would you recommend something like that? Can I do that with other types of breads? (I live in a tropical country, we have summer all year long, 20/35°C all day, every single day)

    Hola Jack! I've been subscribed to you since Sunday and I've already watched all your tips on YT!
    Could you talk about how to change a recipe that contains commercial yeast to sourdough, and specifically sweet bread doughs. I made sourdough Cinnamon rolls yesterday and they didn't turn out sweet at all.

      From what I understand his whole approach is to teach you the science so that you dont need to follow any recipe at all.

    Jack , love all the tips done with such sincere passion . I’m an American and wonder about that accent . Is it a London accent ? If so , or if not , which area ?
    Can tell it’s English, but curious of the location exactly !

    I agree with the butter or oil, it definitely makes the bread softer and lasts a lot longer. I like to keep my bread in a polythene bag in the fridge, which horrifies some people! But it stays nice and fresh and also soft that way. I see so many friends and relatives who keep their bread in paper bags and useless bread bins... and wonder why their bread goes hard as a brick and horribly dry in no time at all. Bread bins should be banned!! :oD

      Totally agree with you. I live in a country where the temperature is constantly at 30 plus C. It keeps it fresher longer.

    Add 3 tbsp diastatic malt to your recipe. Huge difference in my breads. Softer longer.

    Hi Jack enjoy your videos and tips I make bread at home with sourdough and I takes around 24 hours from making it to bake it. my bread last me for 2 -3 weeks soft and mould free. Love it and is so easy !! I don’t get it why more people don’t make their own bread!!

    Thats about 5% per 500g. So should I go 5% on my 850g recipe? That would be 42.5g? seems like alot. Thanks Jack. you got the magic voice to get the info across. You are so captivating. Cant blink or I'd miss it. :)

    Water roux. Fuckin’ water roux. Makes it last twice as long as usual.
