    I started my SD home baking journey 7 years ago. I had fantasies of creating a bakery, but 2 bouts of cancer & aging to 67 years, I realize that will have to be my next life. I continue to sell my bakes from home, about once a month. I live a baker’s life vicariously through your videos. My best to your friend Hope. Thank you for sharing your journey.

    I visited your bakery in Mesa. It was very nice. The 11 hour flight from Scandinavia made the commute a bit long to repeat too often, but I’m happy I did. Next time I’ll visit this branch

    Jon, I've learned so much from you. Still trying to perfect my starter and SD bread. Today I will be making a Panzanella. Great idea. I made a mini Polish country SD bread 2 days ago. I love the taste of Rye. I call my starter Babcie. ❤

    I own some Moffat Turbofan ovens - no need to rotate, they have even temperature in all parts of the oven and work brilliantly!

    So cool to see more expansion for you guys. I wonder how the brand blending will work for this - i.e. Proof products are definitely coming into the shop, but some Hope products may stick around, depending on operational and sales viability.
    Either way, it's good to see customers here are seeing this as a positive. Who knows, maybe some Hope stuff works it's way into the other Proof locations. It'd definitely be interesting to see Proof cakes, pies, etc.

    produce only small products from other place you make here, cookies and cakes, celebration cakes etc. use the small place , for small idems !! good luck, it looks good !! All ovens have diffrent ways of use, like stoves too, worldwide !! Great job, kind regards !!

    bring bread in from your main production location and include a different product line/options like pies, cake, cookies etc. create a different experience for your customer

    Can I ask you a question about your sourdough process? You said in this video you have it hanging out for 24 hours. I assume you mean in the refrigerator. I heard a similar time in a prior video. What temperature do you cold final proof at? And how much do you loaves weigh?

    In my home my sourdough will mold after 3 days in a plastic container .. if i start cutting from it as needed … do i leave the rest uncovered? Or how do u guarantee it will go stale instead of molding? Such an interesting concept thanks for sharing

    Paper bags with an oval cello window. That can loaf was a tester size, right? If I buy a loaf, I don't wish to pay for a large sourdough cran biscuit. Otherwise, score, and congratulations! Pastries in Sourdough; sounds like a destination visit from Canada! Please do not slice my sourdough! 😊

    What part of Poland is your father in? My wife is Polish, born and raised in the Masovia region, more specifically Brwinow. I have no Polish heritage, yet I've been to Poland some 8-10 times now. Still struggling with the language but enjoying it.

    Good for you! You trusted in Universe and Universe provided bit you, your desires and let you show that neighbor by succeeding, you can't keep good, honest people down. Sometime when Universe allows Karma to handleissues it alowes allows "us" to watch. LOL You won by succeeding and being a good person. Like someone earlier said, send that City council member and neighbor a thank you card. Best to you all going forward.
