I've seen someone with that same "tank" with a trolling motor on the back.
Put that meat in a seasoned marinade over night and try that, also after the jerky is done and has cooled down, put it in a ziplock bag with 2 pieces of bread for a day or 2, it makes the jerky very tender and you can use the bread for breakfast, its amazing
Did you know Flair that wrapping the winch cable around the tree scars the tree and puts a kink in your winch line hooking onto itself like that? I would use a tree strap around the tree and hook the line onto the loops of the tree strap.
