    As someone who doesn't have (and will never own) a stand mixer due to size and likely infrequency of use, thanks for demonstrating the old fashioned way. Please don't stop showing both.

      I found one at this thrift store called brown elephant in chi town. It was like $25 bucks and a vintage sunbeam. It’s lit 🔥

    I've made now around four of your recipes and I don't have a stand mixer and I love the fact that you always show how to make it by hand. I just made the sheet pan pizza yesterday and my friends loved it.

    Hi Brian, I set up the dough and the pickled onions last night, made it this morning. Completely amazing. Two pizzas for my wife and I (we could only eat half!) and two for the littles that I turned into egg and bacon pizzas (they only ate half, not nuts about morning fish). Thanks for the inspiration and clear instructions, we are all happy! This recipe is a keeper. Again, many thanks!

    This is one of the things that draws me to this channel. Brian frequently talks about cooking for the the people you love as an expression of love. It's on point as hell that cooking can be how you show love. It ticks off so many love languages. Looks amazing, definitely trying this one as the wife walked by and mentioned how good this looked. Sunday surprise!

    Since you asked for feedback and I know you read your comments: No, I do not own a stand mixer and knead all my dough by hand. Additionally, I'd love to hear more about the theory of bread making in your videos: Why are the proportions the way they are? What properties do you expect from a wetter/dryer dough? How do you know how much yeast to use? What exactly IS strength building, and why do we do it (or not)? Basically, if you wanted to do a whole masterclass series on breads, I would totally watch it.

    I’m a big fan of your recipes and this one did not disappoint. I topped it with your smoked salmon recipe. I can’t eat gluten but made a gluten free sour dough crust and it all came out remarkably well. Great Sunday morning breakfast.

    I'm on my second mixer now, the larger pro model from KA. Gave the smaller one to my mother in law, who doesn't make it smoke like I did.
    I love having a mixer to do the work of kneading, and definitely for rolling pasta.
    I appreciate it because I used to do it all by hand--my first loaf of bread was more than 35 years ago, made in a truck and cooked in a foil pouch in a campfire.

    I have been using everything bagel seasoning on my sourdough loaves for around a year now. It really kicks it up a notch over plain or sesame seeds.

    As you area a connoisseur for making all recipes perfect, I would love to see a video for making the St. louis staple, fried ravioli!! As a St. Louis'n living in KC, a fried ravioli recipe would be AWESOME! Love the videos!

    I'm curious about going the extra mile to boiling the shaped dough round (before the seeds go on) in a skillet, with some baking soda in the water, for that traditional bagel texture, crust, and sheen. it would also keep the middle from rising/puffing in the oven.
    either way, beautiful pie!

    My Aldi in Florissant has a good everything bagel seasoning, and I've seen minced onion and minced garlic at dierbergs, actually in their 4/$5 value section, if you ever go looking again haha

    This is a great idea and looks very good.
    I own a stand mixer but for bread dough I always do it by hand, for some reason, for me the process is more rewarding that way.

    Just here to toss this idea out again. A cook book from you with all of the types of pizza/sauce/preferment styles you can think of is something I would totally buy! Even if you post every single recipe on youtube. Its nice to have a physical copy when the internet is down.

    As a picky lifelong New Yorker, I must say this is very impressive. Only thing I would have done differently is use scallion cream cheese, which is just adding a good amount of chopped scallions when mixing the cream cheese. Great video.

    As a fellow Midwesterner, mad-props to a guy from Chicago gently taunting New Yorkers with 'I think most people with a blindfold on would not be able to tell the difference between this, and an actual, fresh New York bagel.'
    Omg, i'm giggling so much thinking of certain New Yorkers in my life filling up with angst at that: 'wah?? 😡 you don't know new york bagels! I was born and raised in new york, we're the mecca of bagels, my uncle is a bagel! how dare you call that a bagel, and don't even get me started on pizza!' [rest of the rant writes itself].

    Fun recipe! Not sure when I’ll try this, but both Trader Joe’s and Aldi regularly sell everything but the bagel mix. I have both a stand mixer and a food processor, both over 20 years old, but lately I’ve been enjoying whipping up the beer pizza dough with just a silicon spatula and then by hand. Btw making the pickled onions right now!

    Recipe looks amazing! I'm also in the Lou and I usually have luck finding obscure/unique spices at Global Foods in Kirkwood and when I made spicy pickles last summer, I found dried garlic and dried onion flakes there.

    I don't have a standmixer, so I always use your hand mixed versions and they are very appreciated. A big reason I not only watch but actually try out your recipes is because there always is a hand mixed version.
    I'm happy Ragusea also stopped using his stand mixer, but his doughs and method generally are very messy while yours are a lot cleaner and easier to follow. I would be very sad if you stopped making the hand mixed versions.

    I was bummed out because it looks so good but my kids would never eat it, then I realized it was personal pizza size and got happy as I love bagels with onion, cream cheese, and salmon.
