Loved this segment and have just now added this book to my Amazon cart. Normally I order Kindle versions, but I want the hardbound on this one so I can snuggle under covers with it! I actually have been cooking this way for decades, but she sounds like she's got way more ideas for repurposing leftovers than I have come up with.

In the 70s I read in a Tassajara cookbook that vegetables were OK to eat up to, but not including the point that they become rotten. In other words, cut out the bad stuff and it's OK to eat them. We have very little wasted food. I cook big meals like soups or quesadeas or baked falafels, etc. that will last the two of us three days. The flavors actually get a lot better by the third day. We also have a worm bin for vegetable cuttings (not onions or garlic). In California we always keep all of our bread in the freezer and then toast it when ready to eat it.

I definitely try to repurpose food. I add ice to leftover coffee. Great idea.

i make a leftover soup at the end of the week. i saw Jacques Pepin do it on one of his shows. also, in the archives there are videos of Jacques teaching knife skills. having those skills is THE game changer!

No need to even go so far back. I am a millennial and I grew up doing this.

@@tangoangel2782 agree, growing up even middle class ; this was a "thing" with my family - we called it "clearance fridays!!" - as in clearing the frig LOL and that continues till today!!!

Agreed, not sure why the tv journalists are just discovering "leftovers"? I loved Tamar's first book and video (so relaxing). Interested to read the new book to get her ideas on mixing leftovers for great meals.

I once had a roommate who could do this exact thing. To this day I am amazed at the meals she could produce out of leftovers.

I live in USA and sometimes think Americans have forgotten a lot of good stuff. All ,my life I have used leftover to repurpose meals and doing so my cooking time is always short. My children never realized those were leftover from 3 days before and always something new on he table. I have never cooked following a recipe, never. I have never owned a cookbook in my life.
