Mamey Fruit - How to Mamey Sapote

  • What is mamey sapote? Mamey is a tasty tropical fruit we see often at local fruit markets here in Mexico. Mamey fruit is much like an avocado in the way you slice and eat it. It has an inedible skin, creamy inner flesh, and a large inedible pit in the center. How to tell when Mamey sapote is ripe? When buying mamey fruit at the grocery, choose one that is not too firm, it should give when pressed, and look for mamey sapote that still has a nub of stem on the end where it was cut from the tree. For more info on choosing and cutting mamey sapote, check out www.myfoodchannel.com/mamey-f...
    We enjoy mamey ice cream, and we also love “paletas” made from mamey. A paleta is like a creamsicle or frozen fruit bar on a stick. Because it’s creamy, mamey is perfect for a smoothie. Give mamey sapote fruit a try and let me know what you think, and bon appétit!
    How to tell When Mamey Fruit is Ripe
    Mamey fruit varieties are shaped from round to football-shaped sizes with dull, sandpapery skins. The mamey we find here at markets in Mexico range from “hard as a rock” to “so soft it looks like a flat tire”. If eating mamey soon, you want to buy fruit somewhere in between these two stages. The mamey should give slightly when pressed.
    Mamey fruit grows on trees and is cut away when harvested, so pick a mamey that still has a nub of stem where it was taken from the tree. If the crown of stem is missing, the fruit can dry out, and may spoil prematurely.
    If you buy firm mamey, just let it sit unrefrigerated until it softens. Firm, raw mamey is not edible. It’s hard to cut, semi-starchy, and bitter.
    Cut ripe mamey just as you would an avocado. Run a sharp knife through the skin and around the pit to divide the mamey into two halves. There will likely be only a single pit at the center, but there may be up to four pits. The pits are slightly toxic, so do not consume them in any way, and the skin is inedible, as well.
    The meat of the fruit ranges from a light salmon color, to orange, to a deeper reddish hue. Any membrane you find in the fruit from around the pit can easily be scraped away with a spoon.

    Anyone ever buy mamey in the USA, or Canada? I read they grow mamey and do a mail order business in Florida. I found mamey online you can buy and have shipped, but they were ridiculously expensive, and I don't think remotely ripe mamey would ship very well, although unripe mamey are very firm--and heavy!--so maybe not great for shipping. Anyone ever ordered mamey online? How'd it work out?

      I have heard of the fruit only my name in a book. It sounds really versatile in that its sweet and a potato like consistancy. I'll have to keep my eye open to this and take a chance here in Oklahoma.

    Mamey is found all around Miami-Dade County and the Florida Keys. Most commonly found in the form of ice cream, milkshake, or in juiced form. It is not commonly eaten raw. Grows easily in back yards and a staple milkshake in Cuban restaurants. Best recipe I have found includes 1 cup condensed milk, 2 cups whole milk, 1/4 cup sugar, 1/4 tsp salt, ice to your liking, and blend for a minute or until smooth. Word to the tourist, most places that carry anything in mamey flavor, do not know the fruit is the same as mamey sapote. So simply ask for mamey, and enjoy!!!

    I am from the mid west and I wash (rinse) ALL fruits and vegetables even the ones I peel, just because I don't know who has touched them and what has been put on them. When you take a knife to cut or peel all that nasty goes into the fruit or vegetables. Maybe I am a little cautious but oh well that's me. Thank you have a great day and keep on vlogging.

    • @ChefBuckRecipes
      @ChefBuckRecipes  4 ปีที่แล้ว +1

      I believe more and more folks are doing that routinely...we always water rinse our veggies in the sink here in the US, but that's it...in Mexico we always treated the produce with a sanitizing rinse, even the ones where we were only going to eat the insides, because as you said, when you cut through with a knife, you're still going to have contamination from the skin

    North Texas. Never seen a fresh one for sale, but Goya sells frozen mamey puree, and it is available at Hispanic groceries and Walmart. Not super sweet, kind of mealy and borderline gritty, vaguely bitter but it has a unique flavor. Vaguely reminiscent of hawthorn. Still looking for a fresh one.

      It is good in frappe but you have to take care with the skin, between the skin from outside and the fruit, this white you don't eat it cause to you stomach ache. You can do jams too with this fruit, it's very delicious 😋, here in PR we have two kinds of this

I believe the fruit I have is Magana from El Salvador. 7-gallon trees with fruit. I'm in Waller Texas which is a Zone 8, so I'll have to protect them when it gets below 32 degrees.
