マカロンはメレンゲが命なので、卵白は温めないで冷たいのを使うのと、卵白に入れる砂糖は少しずつのほうがいいと思います…。
あと、生地の底を少し潰すとクリームがたくさん入って食べごたえもあると思います。
マカロンを作る際のメレンゲは冷やした状態だけでなく、湯煎しながら作る方法もあるようですよ^^
それぞれやりやすいやり方があると思うので

わたしは授業でそう習ったからそれが正しいのかなと思って、そう言っただけなのに…そんなに言われる必要あるのかな。
卵白を温めると、立ちは早くてキメ細かいけどダレるのも早いんです。
卵白のフチが少し凍ってるくらい冷たい方がしっかりしたメレンゲができるんです。
メレンゲにも種類があって、冷やしながら立てるフレンチメレンゲ、シロップを入れながら立てるイタリアンメレンゲ、温めながら立てるスイスメレンゲで。
今回はスイスメレンゲを使ったと思うのですが、スイスメレンゲはプティフールやお菓子の表面に塗るのが主なんです。
最初に言ったように、マカロンはメレンゲが命だから、すぐにダレてしまうスイスメレンゲよりもイタメレやフレンチメレンゲの方が向いてると思います。
