I made a take on the Riby Sauce this weekend and it was a HUGE hit. People were blown away. I cut the white vinegar, upped the apple cider vinegar to 1.5 cups, and added a tbs of mustard powder and half a cup of honey. Huge hit.
Riby sauce is legit. Has just enough tang, sweetness and umami to make the ribs taste so good. Also good on pulled pork sandwiches as it doesn't over power the pork flavor.
Hey. Just made the Riby sauce and used it on some pork ribs. Love the cumin and mushroom soy sauce in it. A new taste for a South Carolina BBQ lover. Thanks.
Made up the Riby sauce for Mother's Day, and ended up with the best ribs I've ever made, everyone loved it! Also made a batch with coconut aminos instead of the mushroom soy for the gluten free crowd, and they loved it also, although it did alter the flavor quite a bit.
Thanks for the video. Really enjoyed it. Did some babyback ribs tonight with the jub rub and riby sauce. It was amazing. That sauce was outstanding. I live in Ohio and have never been in Texas but if I ever make it to the DFW area Goldee's will be a must stop on my restaurant list.
can't wait to make these! I came by today and everything was amazing! there was this sauce that came with the pork belly that was killer, would love to see a video on that!
Never buying bbq sauce ever again, thx dude! I amped up the Riby with some chipotle and habanero powder, makes an awsome chicken wing suace. Good thing is, here in Sweden, you can buy this soy sauce basicly everywhere.
These sauces are fantastic. Every single one of them! But man.... the Jauce is the best! Hands down my new favorite sauce. I like it more on ribs than the riby.
I didn't have any mushroom soy sauce so I used Bragg Coconut Liquid Amino's (sounds weird but it is used as soy sauce alternative) and Ribby sauce was bomb sauce! Recommend trying this out as alternative. Best ribs I have made. I can't compare to real Ribby 'cause I never had it but this was so good.
Guessing you don't have too many Asian markets in Texas, cause that soy sauce is readily available at Asian Markets here in Washington state. Pretty cheap too, have used it for years. that and Red Boat fish sauce.
Yoooo try adding a touch of hoisin sauce to the JirFee sauce really rounded everything out and marries well with the mushroom soy sawce. Little goes a long way
@@jirbybbq Merry Christmas big dawg. You saved my ass for this Christmas brizkit. I run an ugly drum smoker and I was never able to get the smoke content I wanted in this smoker vs an offset. So choking the damper to 75% really changed the game for me. This also was the first time using season all on top of the salt and pepper and that really upped the flavor of the bark. I did the tallow for the first time as well. Followed your instruction during the rest vs wrapping with it. So overall everything I learned from your channel doubled my quality today easily. Let my bank account recover from the holidays and I’ma swoop some Jirby Drip. I’m prolly gonna bug you on IG for some consult time too if that’s cool. I could hug you bro, seriously I’ve been at this for a couple years now and never have I had this quality. Now I just need to up my consistency lmao
Thanks. I’m gonna try some of that mushroom soy. Have you tried the sauce from Hickory Stick in Everman not far from y’all? If so, what would you say is the base profile(s)? I’m trying to get something really close to that to build from
@@dmichaelzink3005 sorry I missed it and that it had a negative impact on your day. Was watching on my phone and couldn’t make it out. Have a great weekend!
I'm making ribs tmrw and making your Ribby sauce. I don't have mushroom soy sauce and hope soy sauce or soy paste makes it taste similar. Wish me luck *Edit* I made the Ribby sauce with Soy paste and it came out really really good. The sauce did not come out as dark as if it was with the mushroom sauce.
Going to make these as soon as I’m out of sauces purchased at the store. Thanks for sharing the magic! On the riby, was that 1 cup of granulated sugar after the brown sugar and before the mushroom soy sauce?
You're kind of doubling up on Molasses, the brown in brown sugar is from molasses. You can do just 2 cups of sugar and add extra molasses or 2 cups of brown sugar and no molasses and it would probably come out about the same.
I’m curious if regular soy sauce will work, I’m just worried about the mushroom soy sauce because 3 of my family members are allergic to mushrooms lol I wonder if it would even affect them
How much of the mushroom soy sauce and molasses are used in Riby sauce? You mention little bit. Is that a 1/4 cup? Also do you put 1/4 cup or 1/2 cup in the coffee sauce?
i honestly have no idea what im talking about but looks like you have blackstrap and not real molasses. who knows that that does but maybe you'd like the real stuff better
I love how this guy gives off "I have no idea what I'm doing" vibes but always knows exactly what he's doing and nails it every time
Bro your craft and generosity of sharing the craft is like none other👌
Thanks for sharing this. You show the true spirit of Texas BBQ by sharing everything.

Sounds delicious!!
You keep the sugar too?
Can you kill the sugar and use honey instead?
The Juace and riby sauce is awesome. Went there last Saturday. Best bbq I’ve had in a long time. Everything was on point. 🍻
Let’s just say I’m a proud new owner of the half gallon mushroom soy sauce
Definitely gives a nice umami flavor
Do you use as a spritz
Me too. Lifetime supply lol
Thank you for sharing. My kids and I are truly grateful! JT

Satisfaction, Cheers from Austria ! 👍👍

That Riby sauce is amazing one of the best sauces i've tried
Helll ya it's the best

made the Jirfee today and scaled it back to 1/4 and it went perfect with some Honey Hog rub and made only about 10oz. tasted great
This was confusing and exhilarating at the same time, what a time to be alive!
So true ❤️
Thank you for sharing your recipes and techniques! You rock, brother!

Great video. Thanks for being willing to share your recipes!
Thanks my man!! Definitely stopping by next time I’m in Texas. Awesome work!
Made the coffee sauce for a work lunch. People loved it. Thanks, Jirby!
Awesome video. I'm gonna make these for sure.
Btw, in the description you forgot espresso in the Jirfee lol.
Interesting twist with the dark mushroom soy sauce. Thanks for sharing all three recipes.
Thank you! Hope you like them!
Awesome video man! Looking forward to giving these a try!
MAD SCIENTIST BBQ: "Is Mushroom soy sauce the new game changer???"
Oooooof lmao
Bruh. It’s old now.
Just made the riby sauce. It bangs. Most others are a little too tangy but this hits different.
Wow Jirby I made this recipe soo bomb thanks man!
Looks good. If I can find that mushroom sauce I'm gonna try some of this
These sauces are fantastic. Every single one of them! But man.... the Jauce is the best! Hands down my new favorite sauce. I like it more on ribs than the riby.
Man i love the riby though dammit
Great vid man! I'm definitely giving these a try. Hopefully I can come out to one of your classes real soon.
That would be awesome! Goldees does things differently then Jirby for sure

You get that super dark color too with the Bragg Liquid Amino's that he talks about in the video. Great substitute I think...
That’s awesome! Gonna try that out
Even the DARK Pearl River Bridge Soy sauce will give it the color
Guessing you don't have too many Asian markets in Texas, cause that soy sauce is readily available at Asian Markets here in Washington state. Pretty cheap too, have used it for years. that and Red Boat fish sauce.
I’ve never even heard of mushroom soy sauce. That sounds like a game changer. Mushrooms have that meaty savory taste so I bet that would be super good
Pearl River Bridge is the name. It;s a Chinese sauce, their regular Soy and Dark Soy are also key ingredients in true chines wok hjeyyyyyyy
That Jauce is amazing! Finally got my mushroom soy sauce from Amazon.
Yoooo try adding a touch of hoisin sauce to the JirFee sauce really rounded everything out and marries well with the mushroom soy sawce. Little goes a long way

Love the videos! For the table sauce(2nd sauce you made) what was the ingredient before the black pepper?
Jirby is a habitual rule breaker. Reminds you that there are no rules in BBQ!
Congratulations on No. 1!!!
Definitely going to try and make the coffee sauce, never tried anything like that. You mind sharing the mushroom soy sauce brand?
Pearl river bridge

My wife and I were dying laughing by the end of this. Complete slob aesthetic and I love it. My new favorite BBQ channel.
Rude
Just made the Jauce for pulled pork tonight. We shall see 🤞🏻
I’m obsessed with the Riby sauce, have yet to try the other ones yet. Do these need to be refrigerated at all?
With al l the vinegar probably not, but never a bad idea to put it in the ole ice box

Is the pepper just regular or is it more coarse?
probably 16 mesh

On the riby, was that 1 cup of granulated sugar after the brown sugar and before the mushroom soy sauce?
I added bacon fat to the Riby sauce and warmed it on the smoker before wrapping the ribs with it and WOW it was awesome.
How much bacon fat did you add?
Jirby, the molasses that you used what type was it. Med/dark, light or Blackstrap? You did say it was kind of bitter.
The audio is crispy, G! Thanks for sharing your recipes 🤩
Got the 🎤
@@jirbybbq I can tell! It makes a big difference 😁
They sell Pearl River Bridge soy sauces at 99 Ranch stores in DFW

Very true!
@Jirby Great channel :) shout out from South Texas 💪🏼🦁💪🏼🦁
Thank you!
In the Jauce is there also 1 cup of white and 1 cup of apple cider or just the 1 cup of white?
Just one cup white vinegar!
If we can't get our hands on that specific soy sauce would you say use whatever soy sauce we normally get, or just leave it out?
How long will it last on a shelf? Does it need to be refrigerated after making?
How long is the sauce good for refrigeratored?
How much coffee is used to the coffee sauce? Im guessing instant coffee is used ?
He saID about 5 sshots espresso
I’m curious if regular soy sauce will work, I’m just worried about the mushroom soy sauce because 3 of my family members are allergic to mushrooms lol I wonder if it would even affect them
Just get regular dark soy sauce im sure plain old soy sauce would work but you wouldn't get the benefit the strong flavor a darker soy sauce can bring
How much of the mushroom soy sauce and molasses are used in Riby sauce? You mention little bit. Is that a 1/4 cup?
Also do you put 1/4 cup or 1/2 cup in the coffee sauce?

Thank you!!
Do you use the Riby sauce for pulled pork?
You could for sure!
I never have so let me know how it is!
isn't there coffee in the 3rd sauce? not on the list in the description.
Yes hew said about 5 shots of espresso
mmm delicious
I couldn't make out the name of the mushroom soy sauce. What was it?
It's Pearl River Bridge. If you have a local H Mart they will have it. If not Amazon.
How can I go about purchasing some sauce my guy!?
Dm me on Instagram. @Jirby_bbq
I add a half TB of fish sauce
I only had HEB black pepper ketchup... Riby sauce came out money
I’m down the road… I’m here… award winning filmmaker… let’s do this!
Hmmm gonna need to think of a good idea for us to collaborate on
I need some
YESSSSSSS SIR!!!! TY
Thanks for watching!
Where can I cop some of those sauce bottles, any restaurant supply store?
Yeah should be at any of those!
Can find em in grocery stores depending where you go
Kroger has them in the kitchen supply aisle.
You mention the Jirfee sauce is a coffee sauce. Does it have any coffee in it?
watch the video!
You left coffee off the recipe in your description.
Bro don't tell me you're making that for the restaurant and double-dipping that tasting finger
Hahah these are for me only haha look how small the batch sizes are
i honestly have no idea what im talking about but looks like you have blackstrap and not real molasses. who knows that that does but maybe you'd like the real stuff better
