    🍽️ Ingredients:
    Meat (1000 g):
    75 % lean pork shoulder(750g)
    25 % pork loin fat (250g)
    Spices per 1000 g of meat
    250 g cheddar cheese
    18 g salt
    10 g fresh parsley
    5-10 g fresh jalapenos (depending on how spicy you like it)
    4 g black pepper
    3 g sugar
    1,75 g garlic powder

    Hi Daniel, great video, since you smoked this sausage, you forgot to mention you need to use cure #1 in your recipe.

      Hey Carlucci, actually you do not need it. If you want to make a raw / cured sausage and cold smoke it then you need it. For this type it is not necessary. You can use it for color change but not required food safety wise. daniel
