One tip my dear friend taught me in addition to adding salt to your water for boiling is vinegar...she add 1/4 cup of vinegar to the mix. I think vinegar wakes up the flavor.

Most importantly, thank you for showing how to clean them.I boil mine with 2-4 capful of vinegar & salt for about 30 minutes, pour off the scumming water, clean them,add fresh clean water,and cook to tender good!! Instead of corn bread we ate a hoecake with okra. I was wondering if you had a good recipe for joe cakes with okra? I take your recipes and mix in my grandma's seasonings and I swear she's with me.
I grew up in Africa and this is the typical kind of food that we used to eat. But I'm living in the UK now and you can't buy neck bones in the supermarket. I can't get turkey necks or gizzards either. But luckily I found a Muslim halal shop that sells them at a good price. But it's so far away to travel to get it. So when I do go, I stock up and put them in my freezer. Thanks for this great tutorial by the way.....:)

I wash the neck bones real good, but I don't cut anything off and don't scrape out the marrow, I leave the marrow in the groves, it's great to eat, also, I leave the veins going through the neck bones, I eat it all,

I boiled them first, then put them in my oven @ 350° topped with barbecue sauce ! Delicious !!!!
