How to Prepare Garden egg Sauce

  • A simple eggplant stew.
    Ingredients:
    8 Medium-size yellow/green garden eggs
    3 medium Aubergines (purple eggplants)
    3 Medium-size dried or smoked fish
    10 Pieces of beef or kpomo, optional
    1 Cup of palm oil
    1 Large onion
    3 Big Red bell peppers or tomatoes
    3 Scotch bonnets (Ata Rodo)
    2 Tablespoons of ground crayfish
    Locust beans (dawadawa)
    2 Bouillon cubes or maggi cubes
    Salt to Taste

    My grandma made this for us when growing up. Eggplant and white rice was all I could eat when I just got pregnant, life saver.

    Did you boil the dryfish before adding it to the sauce?

      No I didn't, I just rinsed it in salted water and it was soft already

    So wrong garden egg is been cooked with groundnut oil not palm oil😒😒

      Faith Augustine all my life I've known it with palm oil.....you mightn't like it doesn't mean its not used.
